Pistachio syrup: 2 recipes at home

Light, inviting, expressive, with a pleasant aftertaste - this is how gourmets describe exquisite pistachio syrup. By adding it to any drink, you will taste the delicate nut praline.
For all recipes, both raw pistachios and lightly toasted with salt are suitable.
Pistachio syrup recipe with vodka
Ingredients
Pistachios - 2 cups (without shell)
Sugar - ½ cup
Water - ½ cup
Vodka - 30 ml
Method of preparation
Beat the pistachios with a blender until finely ground.
Combine sugar and water in a saucepan over medium heat and stir until the sugar is completely dissolved. Boil the syrup for three minutes, then add the ground pistachios.
Reduce the heat to low and cook for another three minutes, then slowly raise the temperature to medium. Just before it boils, remove from heat and cover with a lid.
Let the coated nut mixture steep for at least 3-8 hours.
Then strain it through two layers of cheesecloth, the nuts can be used for filling in pastries.
Pour the vodka into the nut syrup and shake well. Store in the refrigerator for up to two weeks.
A simple recipe for pistachio syrup
Ingredients
Pistachios - 1 cup (without shell)
Juice of one lemon
Sugar - ½ cup
Water - 1 cup
Method of preparation
Whip the pistachios with a blender until they are about a quarter of their original size in a cup.
In a saucepan, mix all the ingredients and bring to a boil, then reduce the gas to low and cook for about 5 minutes more.
Strain the syrup into a sterile container and close tightly. Shelf life 2 weeks
