Tips before you start
For infusion, it is better to use alcohol diluted to 60-70%, as it better extracts the flavor from the fruit pulp, but vodka is also suitable.
The finished product is drunk chilled from small glasses or tall cocktail glasses. Can be combined with chocolate or added to ice cream.
Kiwi fruits should be ripe and sweet.
Naturally, there should be no rotten, wilted, frozen fruits.
Recipe for "Spicy kiwi with lime" liqueur
The level of sweetness can be adjusted by reducing or increasing the amount of sugar syrup. The finished drink will be brownish yellow. If you want to make it brighter, you can add emerald coloring.
The ingredients
Kiwi - 8 pcs.
Alcohol - ½ liter
Water - 0.3 liters
Sugar - ½ cup
Lime - ½ piece.
Cardamom - 5-6 g
The method of preparation
Peel the kiwi, cut it into thick slices, put it in a jar.
Remove the top layer of the lime peel, add the zest to the kiwi pulp.
Pour in cardamom, pour alcohol over the mass, seal the jar tightly and take it to a dark, warm corner for 1-2 weeks.
Drain the infusion without squeezing the pulp, pass through a cotton or paper filter several times until it is relatively transparent.
Prepare sugar syrup from water and sugar, add to the drink after cooling.
Let the liquor stand in the cool for about 2-3 weeks, re-filter if necessary.
A simple recipe for kiwi liqueur
For additional flavoring, add vanilla and spices (ginger, cinnamon, cloves) to the liquor. The above recipe uses only the pulp, you can also insist on the peel separately, and then combine both drinks. But such a product may turn out to be harsh.
Ingredients
Kiwi - 1.5 kg
Water - 1 liter
Sugar - 1 kg
Vodka - 1.2 liters
The method of preparation
Wash the fruit thoroughly, remove the peel, chop finely.
Put the pulp in a glass container, pour alcohol, and seal.
Shake the contents and place the jar in the dark for a month and a half.
Strain the infusion through a multi-layer gauze cloth several times.
Prepare sugar syrup from sugar and water, wait for it to cool, pour the fruit drink into it.
Mix the liquor well, put it in a bottle, and leave it in the dark for another half a month.
Kiwi liqueur "Wine"
Thanks to wine, the drink will be soft, aromatic and velvety.
Ingredients
Kiwi - 1 kg
Alcohol - 0.8 liters
Dry white wine - 1 bottle
Cane sugar / regular sugar - ½ cup
Cinnamon - ½ stick
Lemon - ½ piece.
The method of preparation
Wash the kiwi, cut into slices without removing the peel, put in a suitable container.
Remove the yellow layer of the lemon peel, remove the white layer and discard it, and add the flesh and zest to the kiwi.
Add cinnamon to the fruit, pour alcohol over the mixture, and let it stand for 4 days in the dark and warm.
Drain the infusion, pass through a filter, add wine and sugar to the drink.
Leave the mixture for 2 months or more in a cool place.
Hot liqueur
This is an accelerated version of the drink for those who don't want to wait and want to surprise their guests. You will need a clay pot with a volume of about 1 liter or another heat-resistant container with a lid.
Ingredients
Kiwi - 0.3 kg
Sugar/honey - 3 tbsp.
Vodka - according to the volume of the vessel
Glutinous dough - for coating
The method of preparation
Cut the washed fruit into pieces (you can leave the peel on, but it is better to remove it).
Put the fruit mass in a prepared container, add sugar/honey, pour alcohol almost to the edge of the dish.
Tightly close the container with a lid, cover it with dough.
Put the pot in a preheated oven and keep it there for at least 6 hours.
After baking, cool the drink, pour it into a bottle, and refrigerate for several hours.
Kiwi liqueur with strawberries
Vodka can be replaced with good moonshine if desired. Berries can be taken both fresh and frozen.
Ingredients
Kiwi - 8-10 pieces.
Strawberries - 0.4 kg
Lemon - ½ piece.
Vodka - 1.3 liters
Sugar - 1 cup
Method of preparation
Peel the kiwi, chop it, put it in a jar.
Cut strawberries into halves, add to the fruit pulp.
Peel the zest from the lemon, add to the fruit.
Pour the mass with vodka, leave for 1.5-2 weeks in the dark.
Drain the fruit infusion, pass through a filter.
Mix the fruit pulp with sugar, expose to the sun for 2-3 days, drain the liquid.
Combine both infusions, re-filter, send to a cool place for about 1 month.
If necessary, pass through the filter again and taste.
Gin liqueur with kiwi and ginger
Ingredients
Kiwi - 8 pieces.
Sugar - 1-2 tbsp. л.
Gin - 0.8 l
Lemon - 1 piece.
Ginger root - 4 g
Cooking method
Cut the peeled kiwi fruit into cubes, put in a glass container.
Remove the yellow layer of peel from half a lemon, add to the kiwi pulp.
Squeeze the juice from a whole lemon and add sugar, mix.
Pour gin over the fruit mixture, let it brew for a week and a half.
Pour the drink through a filter, sweeten if necessary.
Keep cool for 2 weeks and taste.
