Moonshine from watermelon: 2 recipes at home

Juicy watermelon raw materials, despite their high sugar content, are not particularly popular among home winemakers and moonshiners.
The fact is that the sweet southern fruit contains a lot of water, so the alcohol yield from it is quite small. To increase the amount of moonshine, add sugar to watermelon pulp.

Tips before you start
A mandatory component for making a drink from aromatic fruits is yeast. Without them, watermelon raw materials will sour, since it contains practically no "wild" fungi that activate fermentation.
There is no need to add water: it is already in excess in the sweet pulp.
The watermelon peel must be cut off along with the white layer: it can give the moonshine an unpleasant aftertaste.
Ripe, overripe and even slightly sour fruits are suitable for making brew.
Moonshine can be drunk neat, infused on oak chips or in a barrel, or used as an ingredient in cocktails.
Watermelon moonshine "Classic"
Instead of regular sugar, you can use cane sugar or fructose, instead of solid yeast, use dry yeast (15 g).
If you include raisins (1 kg), the fermentation processes will be more active.
Dried fruits should be soaked and slightly heated beforehand.
Before distillation, it is recommended to keep the brew for 1-2 weeks in the cold for complete clarification.
Ingredients
Red watermelon pulp - 25 kg
Sugar - 2.5 kg
Pressed yeast - 50 g
Method of preparation
Rub the watermelon mass through a sieve to separate the seeds.
Sprinkle the resulting gruel with sugar, let it brew a little.
Stir the mass until the sugar is completely dissolved.
Dissolve yeast in warm water, pour into the wort.
Leave the mixture warm until the end of fermentation (about 6-7 days).
Strain, distill twice without intermediate filtration.
Watermelon moonshine with lemon
To get the right amount of watermelon juice, you need about 10-15 large fruits, grape juice - 2-3 kg of light berries. In the absence of grapes, you can do only with watermelon raw materials, increasing its amount to 30 liters.
To squeeze the juice, use a blender, juicer or press. Raisin sourdough can be used instead of yeast. The result is a drink with a milder flavor, but it will take longer to ferment (1-1.5 months).
Ingredients
Watermelon juice - 20 liters
Grape juice - 10 liters
Lemon - 3 pieces.
Sugar - 1 kg
Wine yeast - 1 package
Feeding for yeast - according to the instructions
The method of preparation
Combine the two types of juice, leave them for half a day to start fermentation or heat them a little without boiling.
Peel the lemons, squeeze the juice into the wort.
Grind citrus pulp and zest, add to the drink.
Add sugar, yeast and fertilizer to the fruit mixture.
Install a water seal on the vessel, send the wort to a warm and dark place for fermentation.
After fermentation, drain the drink from the sediment, filter or let it stand in the cold for 2 weeks.
Perform a double distillation.
