Dogwood liqueur: 3 recipes at home

To make dogwood liqueur, you will need ripe and large berries, sweetener, strong alcohol and a little time.
You can also prepare the liqueur by fermentation, without adding an alcohol-containing component. The process is laborious, but the result is worth it.

Dogwood liquor on strong alcohol
In this recipe, sugar can be replaced with liquid honey. And instead of vodka, take diluted alcohol, high-quality moonshine without a pungent odor or inexpensive cognac.
Ingredients
Dogwood - 500 g
Vodka - 1 liter
Granulated sugar - 50-150 g (to taste)
The method of preparation
Dogwoods, like any other berries, should be washed, the stalks removed, and small debris and spoiled fruits removed.
In a jar for infusion, using a wooden spatula, grind the berries to a state of gruel.
Pour in the prepared alcohol and leave for 20 days at room temperature in a dark place. Do not forget to shake the contents of the container once every 3-4 days.
After the specified time, strain the infusion and squeeze the cake well.
Then pour the resulting drink into a clean container, add the sweetener and leave it in a cool place for another week.
Before tasting, the liquor should be passed through a cotton filter and bottled.
Shelf life - 5 years, drink strength ranges from 28 to 33 degrees.
Dogwood liqueur without added alcohol
Ingredients
Dogwood - 1 kg
Raisins - 25 g
Water - 150 g
Granulated sugar - 500 g
The method of preparation
Dogwood does not need to be washed before cooking, but the seeds must be removed from it.
Put the resulting pulp into a glass container, add unwashed raisins, water, and then add granulated sugar.
After mixing thoroughly, cover the neck of the jar with gauze and leave in a dark place at room temperature for 3-5 days.
As soon as the first signs of fermentation appear, replace the cheesecloth with a water seal or a medical glove with a small hole in the finger.
Dogwood liquor will ferment in the same place for about 1-1.5 months.
After fermentation is complete, the drink should be filtered, filtered and bottled.
But before you try dogwood liqueur, it must be kept for 5-6 months in a cellar or refrigerator.
The strength of the finished product is low, only about 7-12 degrees.
Dogwood liqueur with dried blueberries
Ingredients
Vodka - 1 liter
Alcohol - 200 ml
Water - 200 ml
Ripe dogwood - 500 g
Sugar - 200 g
Dried blueberries - 100 g
Method of preparation
Wash the berries, let the water drain. Mash and transfer to a jar or bottle with pre-washed and dried blueberries.
Pour vodka on top, close the container and keep it in a warm place for 30 days.
Preparation sugar syrup, remove from heat and immediately pour in alcohol (while hot), stir.
Strain the tincture through a filter paper and mix with sugar syrup and alcohol, shake the vessel several times and leave it in the room for a day.
Carefully pour the resulting liqueur into dry bottles, tightly seal and store in a dark and cold place for at least 6 months before use.
