Cherry plum liqueur: 4 recipes at home

Cherry plum liqueur is very aromatic and rich in color depending on the variety.
As an alcoholic base, you can use vodka, food alcohol and moonshine without foreign odors.
It is better to use fresh berries, they should be fully ripe and not spoiled.

Cherry plum liqueur without vodka
The liqueur according to this recipe resembles homemade wine, but is much sweeter. The strength of the finished product ranges from 8 to 12 degrees.
Ingredients
Cherry plum - 2 kg
Granulated sugar - 1.5 kg
Water - 200 ml
The method of preparation
Cherry plum must be thoroughly washed and, if desired, remove the seeds, if the seeds are not removed, then the cherry plum must be pierced with a toothpick in several places.
Put the prepared berries in a glass container, add granulated sugar and cover with water. After mixing thoroughly, tie the neck with gauze and put it in a dark place for 2-4 days until the first signs of fermentation (hissing, foam and sour odor) appear.
As soon as the stage of active fermentation has begun, instead of gauze, put a water seal or a clean glove with a small hole in the finger. Leave for 25-45 days in a dark place until fermentation is complete.
After the specified time has elapsed, filter the liquor through a purchased or homemade filter, and squeeze the pulp well and also pass it through the filter.
Pour the finished cherry plum liqueur into glass bottles and leave for 60-90 days to stabilize the taste in a cool, dark place. Store the finished product for no more than 2 years.
Simple cherry plum liqueur
The strength of the finished liqueur ranges from 28 to 32 degrees.
Ingredients
Cherry plum - 1 kg
Vodka - 1 л
Granulated sugar - 150 g
The method of preparation
Wash the cherry plum thoroughly and remove the seeds if desired, if the seeds are not removed, then the cherry plum should be pierced with a toothpick in several places.
Put the prepared berries in a glass vessel and pour the alcohol base. Let it brew for 1 month in a dark place at room temperature.
After 30 days, pass the cherry plum tincture through a filter, pour it into a glass container and leave it in a dark place.
Add granulated sugar to the alcoholized berries, mix thoroughly and put in a dark place for 30 days.
After the specified time, drain the syrup, strain through a sieve and mix it with the tincture.
Pour into glass bottles and let it brew for 10 days before tasting. Store the finished product in the cellar or refrigerator.
Cherry plum liqueur with double alcohol
The color of the finished cherry plum liqueur is a beautiful, rich lemon color.
Ingredients
Pitted cherry plum - 1 kg
Alcohol base - 500 ml
Food alcohol (70-80%) - 500 ml
Granulated sugar - 1 kg
Water - 200 ml
Cloves - 1 pc.
Method of preparation (option 1)
Cherry plum must be thoroughly washed and seeds removed.
Put the prepared berries in a glass container, add granulated sugar and let it brew for 3 hours to form and release the juice.
Then add the alcoholic base, water and cloves, let it brew in a cool dark place for 3 weeks.
After the specified time, filter the liquor, and squeeze the cherry plum thoroughly.
Bottle and store the finished drink in the refrigerator or cellar.
Method of preparation (option 2)
Wash the cherry plum thoroughly and remove the seeds.
Put the prepared berries in a glass container, add water, cloves and pour the alcohol base. Let it stand for 3 weeks in a cool, dark place.
After 21 days, pass the cherry plum tincture through a filter, pour it into a glass vessel and leave it in a dark place.
Add granulated sugar to the alcoholized berries, mix thoroughly and put in a cool place for a week.
After the specified time, drain the syrup, strain through a sieve and mix it with the tincture.
Pour into glass bottles and let the taste stabilize for 1-2 weeks before tasting. Store the finished product in the cellar or refrigerator.
Cherry plum liqueur with spicy infusion
The spicy infusion used in this recipe is made from 5 ingredients (alcohol - 500 ml, cinnamon stick, vanilla pod, whole nutmeg and 5 clove buds). Put all the ingredients in a glass container and leave for 14 days in a dark place, then filter and use in the preparation of alcoholic beverages.
Ingredients
Cherry plum juice - 2 liters
Granulated sugar - 500 g
Food alcohol (95,6%) - 1 л
Spicy infusion - 1 tbsp.
The method of preparation
Before you start making the liqueur, you need to squeeze the juice out of the cherry plum. To do this, wash the berry, remove the seeds and use a juicer to squeeze the juice.
Mix the resulting juice with granulated sugar; to speed up and facilitate this process, you can use an immersion blender.
Pour the sweetened liquid into a glass container, add the spiced tincture and pour the alcohol base. Let it stand for 14 days in a cool, dark place.
After the specified time, strain the liquor through a sieve and pour it into a glass container. Let it brew and stabilize the taste for 6 months.
After six months, we filter the cherry plum liqueur through a purchased or homemade filter and pour it into glass bottles. Store the finished drink in a cool and dark place.
