Liqueur from irgi: 3 recipes at home

Irga is a very tasty and extremely healthy dark blue berry, which is not inferior in its properties to currants, dogwood, chokeberry, etc.

Tips before you start

  1. The berries should be harvested when they are fully ripe. As soon as the fruits of the irgi start to fall to the ground, it is a signal that it is time to harvest.

  2. Irgi berries should not be spoiled or rotten.

  3. To squeeze the juice from the irgi, you must first let it lie down for 5-7 days at room temperature, spreading the berry in a single layer.

Classic irgi liqueur

Ingredients

  1. Irga - 500 g

  2. For the vodka - 500 ml

  3. Granulated sugar - 250 g

The method of preparation

  1. Wash the irga thoroughly and mash the berry a little.

  2. Put the prepared berries in a glass container, add sugar, vodka and mix well. Let it brew for 60 days in a dark place at room temperature.

  3. After 2 months, the liquor must be filtered through a homemade or purchased filter. Pour into glass bottles.

  4. Store the finished product in a cool place.

Honey liqueur from irgi

Ingredients

  1. Irga - 500 g

  2. Vodka - 500 ml

  3. Honey - 200 g

  4. Water - 100 ml

  5. Cherry leaves - 25 pcs.

The method of preparation

  1. Wash the irgi thoroughly and mash each berry with your hands or a rolling pin.

  2. Put the prepared berries in a glass container, add cherry leaves and pour the alcohol base. Let it stand for 12 days in a dark place at room temperature. Do not forget to shake the contents of the container daily.

  3. After 12 days, strain the game tincture through a sieve, and squeeze the cake well, then filter through a purchased or homemade filter.

  4. Mix water and honey and heat to 40 degrees and stir until the honey is completely dissolved.

  5. After the honey syrup has completely cooled, add it to the filtered tincture and mix thoroughly. Pour into glass bottles.

  6. Must be kept for 2 weeks before tasting.

  7. If a sediment appears after aging, then the liquor must be filtered again.

  8. Store the finished liquor in a cool place for no more than 3 years.

Irgi liqueur on cognac

Ingredients

  1. Irga - 900 g

  2. Cognac - 1 л

  3. Granulated sugar - 800 g

  4. Water - 100 ml

Method of preparation

  1. Irga must be thoroughly washed and dried with paper towels.

  2. Lay the prepared berry in a single layer on a newspaper and let it lie down for 5-7 days. This will help to squeeze the maximum amount of juice from the berries, as freshly picked berries do not give off juice well.

  3. As soon as the berry begins to give off juice, it must be thoroughly mashed and the juice must be drained to make syrup.

  4. Mix the juice with water, add sugar and cook the syrup.

  5. As soon as the syrup has cooled, pour it into the crushed berries, mix thoroughly and let it brew for 18-20 hours.

  6. After this time, add cognac and leave for 2-3 weeks.

  7. Strain the finished irgi liqueur through a filter and pour into glass bottles.

  8. Store in a cool place.
