Liqueur and tincture on peaches: 9 recipes at home

If you are not too lazy, you can provide yourself and your loved ones with light and not too light peach drinks for the entire autumn-winter period. The main thing is that the velvety fruits are extremely juicy and no less ripe.

As an alcoholic base, good vodka, grain alcohol diluted to a strength of 45 degrees or conscientiously purified double-distilled moonshine is suitable. In addition, in the case of liqueur, you can do without strong alcohol at all.

Peach liqueur without an alcohol base

Let's start with a weak, very ladylike liqueur that does not require additional alcohol additives.

The method of preparation

  1. Wipe the unwashed peaches with a clean, dry cloth (so as not to lose the precious wild yeast), cut them in half, pit them and mash them to a puree.

  2. Transfer the resulting mass to a sterile clean fermentation container and cover with sugar.

  3. Provide the vessel with a lid with a water seal or a rubber medical glove with a small hole pierced in the finger and put it in a quiet, dark room with a temperature of 18-25°C.

  4. If after 12 hours the first signs of fermentation do not appear (foam, hissing, sour odor), add 30 g of unwashed raisins to the mashed potatoes.

  5. After the fermentation stops (in about a month and a half, the glove will fall off or the water seal will stop bubbling), filter the liquor, squeeze the fruit into it, pour it into bottles and seal them hermetically.

  6. Send the drink to the cellar to mature for at least 3-4 months.

Peach seed liqueur

Ingredients

  1. Vodka - 1,5 л

  2. Water - 200 ml

  3. Sugar - 400 g

  4. Peach stones - two handfuls

The method of preparation

  1. Crush dry peach stones (without pulp residue), pour into a bottle, pour vodka and leave in a sunny place for 30-35 days.

  2. Drain the infusion thoroughly.

  3. Prepare sugar syrup: pour sugar into a saucepan, pour boiling water, cook until thick and cool.

  4. Pour the sugar syrup into the liqueur, stir, pour into bottles and seal tightly. Store in a dark place.

Strong liqueur with peach juice

If the drink seems too strong, increase the amount of juice.

  1. Mix juice and moonshine in a liter jar.

  2. Close the container tightly, shake well and send it to a cool, dark place.

Peach stumbler

List of ingredients

  1. Peaches - 1 kg

  2. Neutral alcohol (vodka/alcohol/ moonshine) - 500 ml

  3. Water - 50 ml

  4. Sugar - 100 g

  5. Cinnamon - ½ stick

  6. Vanilla - on the tip of a knife

  7. Dry mint (optional) - 2 g

The method of preparation

  1. Cut the washed fruit in half, pit it and cut into small slices.

  2. Put the slices in a jar, fill them completely with alcohol and close tightly.

  3. Keep the container for a month and a half in a dark, warm place, shaking it vigorously once a week.

  4. Then, strain the liquid and squeeze the fruit well into it.

  5. Prepare a decoction from water, sugar, spices and mint (while boiling, keep the substance for about 4 minutes over low heat, removing the foam and waiting for the sugar crystals to completely dissolve).

  6. Strain the hot broth, mix it in a saucepan with peach infusion, put the substance on the fire and keep it under the lid until it starts to boil.

  7. Immediately remove the boiling liquid from the heat and let it cool to room temperature in the same saucepan under the lid.

  8. If the drink does not seem sweet enough, you can add sugar to taste.

  9. Bottle the finished stumbler and send it to the basement for 5-7 days to finish.

Peach and strawberry stumbler

If you don't mind second-harvest strawberries, you can try making this not-so-ordinary drink.

List of ingredients

  1. Peaches - 5 kg

  2. Strawberries - 600 g

  3. 55-degree water-alcohol solution - 5 liters

  4. Sugar - 1.4 kg

  5. Lemon zest - 3 strips

  6. Oak chips - 3 tbsp. spoons

The method of preparation

  1. Keep the fruit in a warm, dark place for a day.

  2. Remove the seeds from the fruit and crush them with a hammer.

  3. Cut the fruits into slices and put them in 3 three-liter jars (the containers should not be more than 2/3 full).

  4. Add 200 g of strawberries, a strip of zest, 1 tbsp to each jar. spoonfuls of oak chips and 1/3 of the total amount of crushed seeds.

  5. Pour alcohol into each container to the top, close tightly, shake vigorously and put it in a warm, dark place for a week (shake the jars daily).

  6. After the specified period, strain the substance, squeeze the fruit and berry mass into it and pour it into a saucepan.

  7. Add sugar to the liquid and cook over medium heat, bringing it to a boil.

  8. Immediately remove the boiled substance from the stove and cool it down as soon as possible (for example, put it in a large pot of ice water or in the refrigerator).

  9. Pour the stumbler that has cooled to room temperature into bottles, seal them hermetically and let the drink recover, leaving it in the cellar or refrigerator for a month.

Universal peach tincture

If you squeeze peach pulp into the tincture just before bottling, you will get an equally delicious liqueur.

List of ingredients

  1. Pitted peaches - 1 kg

  2. Neutral alcohol (vodka / alcohol / moonshine) - 1 liter

  3. Sugar - 200 g

  4. Cinnamon - 1 stick

  5. Almond oil (optional) - 2-3 drops

The method of preparation

  1. Divide the washed peaches into halves and cover with sugar.

  2. When the juice appears, put the fruit in a saucepan, add cinnamon and keep it on fire, bringing it to a temperature of 80-90°C.

  3. Remove the fruit from the heat, cool to room temperature, put it in a jar with the juice, add almond oil if desired, and pour over the alcohol.

  4. Put a tightly closed container in a dark, warm place for 3 weeks.

  5. After the specified period, strain the liquid, pour it into bottles and seal them tightly (the fruits remaining in the jar can be used as a filling for baking).

  6. Let the drink rest for several weeks in a cool, dark place.

Peach tincture: the most primitive version

This simple tincture, as the Portuguese would say, cannot be spoiled even by a cat.

List of ingredients

  1. Peaches - 300 g

  2. Vodka - 700 ml

  3. Water - 300 ml

  4. Sugar - 100 ml

The method of preparation

  1. Pour boiling water over the fruit for 2 minutes, then peel it, remove the seeds and cut into small slices.

  2. Put the fruit in a half-liter jar, pour vodka over the top, close tightly and put it in a warm, dark place for 10 days.

  3. After the specified period, strain the liquid into a larger jar (peach slices can be sent for confectionery needs), add the remaining vodka, water, sugar, close the lid and shake well.

  4. Keep the tincture in the same place for another three days, and then bottle it.

Peach tincture with honey

This rich drink can be used not only in its pure form, but also for cocktail and confectionery purposes.

Spicy ratafia tincture with peach kernels

According to this recipe, you can make a truly royal or, if you like, royal drink.

List of ingredients

  1. Peach kernels - 350 g

  2. 60-degree water-alcohol solution - 600-750 ml

  3. Chopped cinnamon - 5 g

  4. Cloves - 1-2 pieces

  5. Dried ginger - 1-2 g

  6. Sugar (if necessary) - 200 g

  7. Water (if necessary) - 200 ml

The method of preparation

  1. Pour boiling water over the kernels for 2 minutes, peel and chop them.

  2. Put the result into a liter jar, add cloves, ginger and cinnamon, then fill the remaining space with alcohol.

  3. Shake the tightly closed container well and leave it on the sunny windowsill for a month.

  4. Strain the tincture and, in case of excessive strength, dilute it with boiled water or syrup made from the amount of water and sugar specified in the recipe.

  5. Bottle the finished drink and send it to a cool, dark room for at least another week.
