The classic peach wine recipe

Peaches have a very low acidity, so for normal fermentation, further storage and stabilization of the taste, citric acid has to be added.

Ingredients

  1. Peaches - 5 kg

  2. Sugar - 2 kg

  3. Water - 3 liters

  4. Citric acid - 20 grams (or 5 lemons)

The method of preparation

  1. Remove the seeds from the unwashed fruit (so that wild yeast remains). If peaches are dirty, they can be wiped with a dry cloth.

  2. Crush the peel and pulp with your hands until smooth.

  3. Put the resulting liquid in a container with a wide neck. Add 1 kg of sugar, water, citric acid (or squeeze the juice of five lemons).

  4. Mix well, cover with cheesecloth and leave for 2-3 days in a dark place at room temperature. Once a day, stir with a clean wooden stick, drowning the floating pulp - particles of peel and pulp - in the juice.

  5. When signs of fermentation appear: foam, hissing and a slight sour odor, filter the wort through cheesecloth. Then the pulp must be squeezed out. Pomace is no longer required.

  6. Pour the resulting juice into the fermentation vessel, filled to no more than 2/3 of the volume.

  7. Then install a water seal or a glove with a hole in one of the fingers on the neck (done with a needle). Transfer the container to a dark place with a temperature of 18-25°C. After 12-36 hours, the water seal will begin to emit bubbles or the glove will inflate. This means that everything is going well.

  8. Add the second portion of sugar (0.5 kg) after 5 days from the moment of installing the water seal. To do this, drain 0.5 liters of fermenting juice, dissolve sugar in it, then pour the syrup back into the wort and seal it with a shutter (glove).

  9. After another 5 days, add the remaining sugar (0.5 kg) according to the technology described in the previous paragraph.

  10. Active fermentation of peach wine lasts 20-55 days. Its completion is indicated by the absence of bubbles in the water seal (deflated glove), the appearance of a layer of sediment on the bottom and partial clarification of wort.

  11. Pour the young wine into another container through a thin tube. It is important not to touch the sediment at the bottom. If fermentation does not stop after 50 days from the start of cooking, to avoid bitterness, the wine must be drained from the sediment and put under a water seal to ferment.

  12. Taste the taste of the finished drink. Optionally, add more sugar for sweetness or fortify the wine with alcohol or vodka in the amount of 2-15% of the volume. Fortified wine is better stored, but tastes harsher.

  13. If everything is satisfactory, pour the wine into a new bottle to the top (preferably without contact with oxygen), close the cork tightly, transfer to a room with a temperature of 5-16°C and leave for at least 4-6 months for aging, which will improve the taste. If sugar was added for sweetness, keep under a water seal for the first 7-10 days in case of repeated fermentation.

  14. Once every 20-30 days, remove the wine from the sediment by pouring it through a tube into another container, so the drink will become lighter. Cooking is complete when the sediment no longer appears.

  15. After 6 months of aging, pour the finished homemade peach wine into storage bottles, seal and store in the refrigerator or cellar. Shelf life up to 3 years. Alcohol content - 10-12%.

Wine from peaches with the addition of alcohol

Ingredients

  1. Peaches - 3 kg

  2. Honey - 100 g

  3. Water - 3 liters

  4. Alcohol - 1 liter

  5. Sugar - 1.5 kg

  6. Nutmeg color - 10 g

  7. Cinnamon - 10 g

  8. Vanillin - 5 g

The method of preparation

  1. Wash the peaches thoroughly, remove the seeds, wipe them and put them in a bottle.

  2. Pour water, add a little honey and leave to ferment for 2-3 weeks.

  3. Strain the resulting liquid, add sugar, spices, alcohol and leave for 3 weeks.

  4. Bottle the wine and leave it in a cool place for 2 months.

A simple recipe for peach wine

Ingredients

  1. Vodka - 250 ml

  2. Dry white wine - 2 liters

  3. Sugar - 300 g

  4. Peach - 6 pieces.

  5. Peach pits (kernels) - 5-6 pcs.

  6. Vanilla - to taste

  7. Cloves - 2 pcs.

The method of preparation

  1. Peel the peaches, put them in a large bowl or glass jar, add peach pits and cloves.

  2. Pour white wine over the peaches and put in a cool place.

  3. After 2-3 days, strain the mixture twice through a cloth previously soaked in hot water and thoroughly wrung out.

  4. Add sugar and stir until it is completely dissolved.

  5. Add vodka and pour the drink into a decanter or bottle. Serve cold.
