A simple recipe for peach liqueur

Pay special attention to the method of peeling the fruit. It will be useful for most of the recipes below.

List of ingredients

  1. Peaches - 1 kg

  2. Neutral alcohol (vodka/alcohol) - 1 liter

  3. Water - 1-1.5 liters

  4. Sugar - 350 g

  5. Cinnamon (optional) - 1 stick

  6. Star anise (optional) - 1 piece

Method of preparation

  1. Pit the peaches and pour a liter or one and a half liters of boiling water for 2-3 minutes. Then, pour the boiling water into a free, clean bowl and cool the fruit in cold water, which will allow you to easily peel it with a kitchen knife.

  2. Puree the peeled fruit using a blender or a regular masher.

  3. Pour 200 g of previously used boiling water into a saucepan, put it on the fire, add sugar and cook a simple syrup (all the remaining water can be poured out).

  4. Cool the syrup to room temperature and pour it into the fruit mass.

  5. Squeeze the resulting substance hard through cheesecloth into a glass jar, then add alcohol and spices to the same container.

  6. Close the jar tightly, shake it well and put it in a dark, warm place for a couple of weeks.

  7. After the specified period, strain the liquid twice through a thick filter, pour into a clean glass dish, close it tightly and return it to a dark, warm room for another 7-10 days (if the future drink does not seem sweet enough or too strong, you can add a little more syrup to it in advance).

  8. If necessary, filter the finished liqueur again, bottle it and store it in a dark (preferably cool) place.
