Fresh gooseberries are rather sour and inexpressive - a berry for amateurs. But when it appears in the composition of soulful Eastern European liqueurs of various strengths, the number of such lovers grows exponentially.

The simplest gooseberry liqueur
In addition to ease of preparation, the proposed liquor is characterized by wide variability. If you wish, the 25-degree drink provided for in the recipe can be made less strong by replacing 70-degree alcohol with ordinary vodka. If you want to achieve a more incendiary result, you will need to reduce the amount of water. The amount of sugar can be increased to your liking.
Ingredients
70-degree alcohol or well-purified moonshine of the same strength - 1 liter
Ripe gooseberries - 1 kg
Sugar - 300 g
Water - according to the situation
The method of preparation
Sort the gooseberries, clean them of cuttings and other plant debris, and then wash them thoroughly. Put the berries in a three-liter jar and crush with a pestle. Pour them with alcohol, close the lid tightly and leave in a warm, dark place for 10 days.
Drain the alcohol, strain, pour into a clean container, close tightly and hide in a dark place for a while.
Sprinkle the remaining berries with sugar and keep them on a sunny windowsill for 5 days.
After the specified period, strain the resulting syrup, squeeze the berries into it and add water so that the total volume of liquid is equal to a liter.
Thoroughly mix the resulting substance with the previously prepared alcohol tincture, strain well again and pour it back into a clean jar.
Keep the tightly closed container for about a month in a dry, dark place, filtering the drink from time to time when cloudiness or sediment appears. The finished liqueur should be bottled and placed in a cool, dark place for storage.
Ancient gooseberry liqueur
It was already possible to taste the liqueur prepared according to the following recipe in the century before last.
Ingredients
60-degree alcohol or similar purified moonshine - 2 liters
Ripe gooseberries - 2 kg
Sugar - 600 g
Pure still water - 2 liters
The method of preparation
Sort the berries and free them from vegetable debris. If necessary, wipe them with a clean cloth, as washing will kill the wild yeast on the skin.
Put the gooseberries in a three-liter jar, lightly crush them with a wooden spoon, cover with sugar, cover with cheesecloth and put in a dark, warm place.
As soon as fermentation begins (a sour smell and the first signs of foam appear), pour the berries with alcohol, close the lid tightly and leave for 3 weeks in a dark room at room temperature.
Then, pour the alcohol through a filter into another vessel, and pour water in its place.
Close the jar again and return it to a dark place at room temperature for a week.
Then, drain the water, squeeze the berries into it, filter thoroughly and mix with alcohol (at this stage, you can add more sugar to the drink if you wish).
Pass the result through a filter once again, bottle it and send it for storage in a dark, cool room. It is advisable not to touch the finished liqueur for at least a month.
Polish gooseberry liqueur
As you can see, our western neighbors know a lot about tasty alcohol.
Ingredients
Vodka - 1 liter
Ripe gooseberries - 1 kg
Liquid honey - 0.5 liters
Vanilla - 2 pods (or 2 tsp.). spoons of vanilla extract)
Ginger - 5 pcs. 0.5 cm in diameter
The method of preparation
Put the sorted, cut and washed berries in a jar, lightly crush them, add spices and pour vodka.
Close the jar with a lid and leave it for a month in a dry, warm place, remembering to shake it from time to time.
Then, drain and filter the vodka, and add honey to the berries.
Keep a tightly closed container in the dark for another 2 weeks.
After that, pour the resulting syrup through a filter, squeeze the berries into it and mix with the alcohol base.
Filter the result once again, bottle it and send it to a cool, dark place for a month for final maturation.
Low-alcohol gooseberry liqueur
Contrary to the opinion of a number of experts, we decided to classify this drink, despite the absence of a pronounced alcohol component, as a liqueur. This decision is supported by the density and sweetness of the drink, which distinguish it from homemade wine.
Ingredients
Ripe gooseberries - 1 kg
Sugar - 1 kg
Water - 250 ml
Method of preparation
Sort the gooseberries and wipe them if possible. Put the berries in a jar, mash them with a pestle, add sugar and cover with water.
Tie the neck of the container with gauze and put the jar in a dark, warm place for 2-3 days.
When the first signs of fermentation appear, pull a medical rubber glove with a hole pierced in one of the fingers over the neck or close the container with a lid with a water seal (in the absence of fermentation, throw 50 g of unwashed raisins into the wort and wait a few more days).
Leave the substance prepared in this way in a warm, dark place for a month and a half. At the end of fermentation (precipitation, deflation of the glove or the absence of bubbles from the water seal), the drink should be removed from the sediment, passed through a dense cotton gauze filter, bottled and sealed.
This liqueur is best kept in the cellar. In addition, it is in your best interest not to touch the drink for the next three months.
Gooseberry liqueur with apple or quince wine
Ingredients
Vodka - 750 ml
Apple or quince wine - 750 ml
Gooseberries - 1 kg
Sugar - 200 g
The method of preparation
Ripe berries should be washed and dried beforehand. Then pour into a large jar, pour vodka, leave for 15 days.
Carefully pour off the vodka, put it in a cool place for a while. Pour wine over the same berries, let stand for 14-15 days, and drain the tincture well.
Pour sugar into the liquid, put on fire, bring to a boil 3-5 times while stirring, carefully removing the foam each time.
Mix with infused vodka, leave the mixture for another 5 days and pour into dry, clean bottles. Seal well.
Gooseberry liqueur with white wine
Ingredients
Gooseberries - 1 kg of ripe gooseberries
Sugar - 1 cup
Vodka - 750 ml
White dry wine - 750 ml
Method of preparation
Pour sweet gooseberries into a bottle, pour vodka and leave for 2 weeks.
Then drain the infusion, and pour wine over the gooseberries and let it brew. After 6-8 hours, drain the wine, mix with the infusion in an enamel saucepan, add sugar, bring to a boil, remove the foam and set aside.
Do this 4 more times, removing the foam each time. Filter the cooled liqueur, pour it into bottles and cork it. Store in a cool place.
