Currant liqueur: 7 recipes at home

Quite often, there are not just a lot of currants (both black and red), but a lot of them. In this situation, it is appropriate to mention that this berry can and should be used to make delicious alcoholic beverages of various strengths. For example: liqueurs.
It is also made from currants: tinctures, wine, Liqueurs
Tips before you start
Currants must be separated from ridges, plant debris, as well as rotten, spoiled and moldy berries.
The berries should be as ripe and juicy as possible.
Red currants are more acidic than black currants and, accordingly, require more sugar (about ¼ of the specified weight).
Sugar specified in the recipes can be replaced or supplemented with liquid honey, if desired.
Classic vodka liqueur
For this type of liqueur, you can use either black or red currants. And, both in fresh and frozen form (the first, of course, is preferable).
Ingredients
Currants - 3 kg
Vodka or 45-degree alcohol - 250 ml
Sugar - 1 kg
The method of preparation
Rinse the berries in cold water, let the water drain well.
Remove the berries from the twigs and place them in a large glass container, sprinkling with sugar.
Cover with gauze, leave for 4 days in the sun. Shake the vessel with the contents daily.
After the start of fermentation, install a water seal, keep the jar in a dark place for 45 days.
When fermentation stops, carefully pour off the liqueur, filter, pour in alcohol and stir.
Pour the finished liqueur into prepared bottles, seal, store in a cool place.
Liqueur made from blackcurrant juice
In principle, no one prohibits the use of redcurrant juice in the recipe, but you need to keep in mind that this option will require more sugar, and the result will be less saturated.
Ingredients
Blackcurrant juice - 500 ml
Vodka or 45-degree water-alcohol solution - 500 ml
Sugar - 200 g
Ground cinnamon - 1 pinch
Cloves - 2-3 pcs.
The method of preparation
Mix all ingredients well in a suitable jar.
Keep a tightly closed container in a dark, warm place for a month.
Pass the resulting drink through a thick filter and bottle it.
Keep the hermetically sealed container in a cool, dark place for a month or two, after which it can be put on the table.
Liqueur made from black currant berries and leaves
Here - no options. The red berry does not look at all in this scenario.
Ingredients
Currants - 1 kg
Pure grain alcohol - 600 ml
Water - 400 ml
Currant leaves - 10 pcs.
Sugar (to taste) - 250-350 g
Put the washed berries in a jar and mash them lightly.
Add clean leaves, water and alcohol, then mix everything thoroughly.
Put a tightly closed container in a cool, dark place for a month.
Then carefully filter the drink, squeeze out the cake and add sugar to your taste.
Mix the substance thoroughly, close it again with a tight lid and return it to a cool room for 4 days (while, during the first 2 days, shake the liquid several times to dissolve the sugar).
After the specified period, strain the drink again, bottle it, seal it and leave it alone for at least a couple of months.
Double blackcurrant liqueur
This variant of the drink has pronounced Polish roots. Accordingly, you cannot do without liquid honey.
Ingredients
Black currants - 1 kg
Vodka - 500 ml
Pure grain alcohol - 500 ml
Sugar - 400 g
Flower honey - according to the situation
The method of preparation
Pour the washed berries into a jar, pour alcohol, close tightly and shake thoroughly.
Send the container prepared in this way to a dark, warm place for a month.
Then pour the alcohol into another jar, and mash the berries remaining in the previous container and cover with sugar.
Leave the tightly closed currants and the equally tightly closed alcohol infusion in a warm, dark room for another 10 days.
After this time, strain the currant syrup thoroughly, squeeze the cake into it and mix it with the alcohol base.
If necessary, add honey and mix everything again (in principle, sugar is also suitable, but it will not be authentic and I would even say: not poetic).
Close the drink tightly again and return it to a warm, dark room for another week.
Strain the result again, bottle it and send it to the cellar to wait for its time (again, it is better not to rush).
Triple liqueur
If the previous "gentleman's" drink seems too strong to you, you can add 500 ml of drinking still water to the list of ingredients, and add another step to the cooking process.
The method of preparation
Do everything up to step 5 from for this recipe.
After 10 days, strain the currant syrup thoroughly, mix it with the alcohol base and close it tightly again.
Pour the remaining berry cake with water (the water should cover the currant pulp by 2-3 cm), close tightly and put in a cool, dark place for two weeks.
Next, filter the liquid, squeeze the cake into it and pour the new syrup into a container with strong liquor.
If necessary, add honey or sugar and mix again.
Close the resulting substance tightly again and return to a warm, dark room for another week.
Strain the result for the last time, bottle it and send it to the cellar for at least two months of rest.
Noble casserole liqueur: red on red
Old world drink made from red currant. Very quick to prepare and very tasty to drink.
Ingredients
Red currants - 1 kg
Red wine (you can use good homemade) - 500 ml
Sugar - 200 g
Put the washed currants in a ceramic pot (or, if not, in an enamel saucepan) and pour wine over them.
Cover the container with parchment paper (or foil) with several holes pierced in it and put it in the oven preheated to 40-60°C.
Keep the pot in the oven for 7-10 hours, taking it out from time to time for 5-10 minutes to check how much the berry has given up its juice.
After the above period, finally remove the pan, cool its contents to room temperature, filter the drink well and squeeze the juice from the berries into it.
Add sugar, mix the result, then wait a few hours and then bottle the liqueur.
Keep the drink for two weeks in a cool, dry place and, finally, please your family and friends with it.
Blackcurrant liqueur "Stumbler"
Ingredients
Water - 850 ml
Vodka - 750 ml
Black currant berries - 1 kg
Sugar - 1 kg
The method of preparation
Rinse, dry and remove ripe berries from the branches.
Mash currants, put in a sieve or cloth bag, let the juice drain well.
To prepare sugar syrup, remove the foam and cool.
Mix syrup and currant juice, put on fire, let it boil once and immediately remove from heat and pour in vodka.
Stir, put on low heat again, do not let it boil, boil the liqueur until it thickens.
Cool the liqueur, pour it into prepared bottles and carefully cork it. Store in a cool, dry place.
