Making homemade liqueur and liqueur from grapes is not so easy. To do this, you need to have certain knowledge and skills, have significant stocks of grapes, and also - special equipment. Not every lover of delicious homemade alcohol can fulfill all these requirements; especially when it comes to urban residents.

Tips before you start

  1. Grapes must be ripe, sweet and aromatic.

  2. Quite often, white and pink muscat varieties are used for liqueurs, but, according to professionals, some varieties of black and dark blue grapes are best suited in this case.

    In particular, of the black grape varieties, the most suitable is the well-known Isabella.

    Its closest relative, a slightly lighter Lydia, has also proven itself well.

    It is these two varieties that we recommend that beginners who produce their own alcoholic beverages opt for.

  4. Keep the place of production, equipment and utensils hygienic.

Low-alcohol liqueur made from grapes

When making this drink, it is important to remember the golden rule of the winemaker: do not wash the berries in any case!

Otherwise, you will kill the wild yeast on the skin of the fruit, which is necessary for effective fermentation.

Ingredients

  1. Grapes - 2 kg

  2. Granulated sugar - 500-750 g (depending on the level of sweetness of the grapes)

  3. Water - 500 ml

The method of preparation

  1. Cut off the berries from the crests and sort them thoroughly (rotten grapes will irrevocably spoil the taste of the drink).

  2. From water and sugar prepare the syrup.

  3. Lightly mash the berries in a three-liter jar and pour them with cooled syrup (the level of the sugar solution should exceed the grape mass by about 3 centimeters).

  4. Tie the fermentation container with gauze and place it in a dark, dry place with a temperature of 18-25°C until fermentation begins (if the substance has not fermented on the third day, add a few crushed grapes or a handful of raisins to it).

  5. As soon as the process has begun (observed: foam, hissing and the presence of a sour odor), close the jar with a lid with a water seal or pull on the neck of a familiar rubber medical glove with a tiny hole in one of the fingers.

  6. Then, return the container to a dry, dark place and keep it there until the fermentation is complete (t.е., a month and a half).

  7. When the glove falls off or the bubbles finally stop coming out of the water seal, strain the substance through a thick cotton gauze filter and bottle it.

  8. Store the finished drink in the cellar or refrigerator.

Isabella grape liqueur with vodka

Warning! By the same principle, grape liqueur on alcohol is prepared. But we do not recommend making it on moonshine.

Even the highest quality homemade distillate can significantly change the taste of a grape drink, and not for the better.

Ingredients

  1. Grapes - 1.5 kg

  2. Vodka or 45-degree water-alcohol solution - 500 ml

  3. Water - 250 ml

Cooking method

  1. Prepare the liqueur according to the technology specified in the in the previous recipe.

  2. Then, mix it with vodka or a water-alcohol solution, adding a little more sugar if necessary.

  3. Keep the result for five days in a dark, dry place.

  4. Then carefully filter the liquor and bottle it.

  5. The place to store the drink, as in the previous case, should be a cellar or refrigerator.

Liqueur made from grape juice

And in this case, the same Isabella remains a win-win option.

Ingredients

  1. Grapes - 2-2.5 kg

  2. Vodka or 45-degree water-alcohol solution - 500 ml

  3. Granulated sugar - 500 g

The method of preparation

  1. Squeeze the juice out of the washed and sorted grapes, strain it and keep it in a saucepan on the fire until the start of steam formation.

    During this time, you need to have time to dissolve all the sugar in the heated juice.

  2. Remove the liquid from the heat and cool to room temperature before boiling.

  3. While the substance is cooling, wash and dry the bottles intended for the future drink and fill them to a quarter with strong alcohol.

  4. Add grape juice to them, seal tightly, shake well and send to a cool, dry place.

  5. The drink should be consumed within three to four months.

Classic grape liqueur

Ingredients for a three-liter bottle

  1. Dark grapes - 2 kg

  2. Sugar - 700 g

The method of preparation

  1. Wash ripe grapes and let the water drain. Separate the berries from the crests and remove rot.

  2. Pour the prepared grapes into a bottle, sprinkling with sugar.

  3. Tie the neck of the bottle with cheesecloth and put it in a warm place until signs of fermentation appear.

  4. After that, remove the cheesecloth, install a water seal and leave for 20-25 days until fermentation stops completely.

  5. Then drain the liqueur, squeeze out the pulp, filter everything, pour into bottles and cork.

Grape liqueur

Ingredients

  1. Vodka - 1 liter

  2. Grape juice - 1 liter

  3. Sugar - 1 kg

  4. Dry tea - 10 g

  5. Bay leaf and black peppercorns - 5 pcs each.

  6. Vanillin - 1/2 tsp.

The method of preparation

  1. Mix vodka with grape juice, add sugar and stir until dissolved.

  2. Pour in the spices, mix again and leave for 5-6 days, shaking daily.

  3. Strain, pour into bottles for storage.

Black grape liqueur

Ingredients

  1. Water - Z l

  2. Alcohol (70°) - 3 liters

  3. Berries of large black grapes - 1.5 kg

  4. Sugar - 500 g

The method of preparation

  1. Rinse the berries, dry them well and, cutting each in half, remove the seeds.

  2. Put in a large glass jar, pour the berries with alcohol to the top.

  3. Tie the jar with a thick cloth, leave for 35-40 days.

  4. Strain the liquid, add the remaining berries, cover with sugar and cover with water. Cook, stirring, for 10 minutes, cool.

  5. Filter thoroughly, mix with the decanted liquid, can be filtered again and poured into storage bottles.

Spicy grape liqueur

Ingredients

  1. Fresh grape juice - 1 liter

  2. Sugar - 1 kg

  3. Black tea - 1 tbsp.

  4. Bay leaf and black peppercorns - 5 pcs each.

  5. Vanillin - 1/2 tsp.

  6. Vodka - 1 liter

The method of preparation

  1. Mix all ingredients in a bottle, close and leave for 5-6 days, shaking regularly.

  2. Then strain, filter, bottle and cork.

  3. Leave for at least a month and the drink is ready to drink.
