Strawberry liqueur - sweet, tasty, red. This is how you can describe this wonderful liqueur. The most famous representative XuXu (Xu Xu) is a German liqueur created in 1997 by Georg Hemmeter. The drink is famous for its unusual manufacturing technology: no sugar is used for production, and the strawberry content is over 65%.

Classic strawberry liqueur recipe
Ingredients
Vodka (alcohol, cognac) - 1 liter
Ripe strawberries - 1 kg
Sugar - 1 kg
Water - 0.5 liters
The method of preparation
Sort through fresh ripe strawberries, discarding rotten fruits, wash well, remove the stalks. Cut the berries into two parts.
Pour the processed strawberries into an ordinary glass jar or bottle, pour vodka (other alcohol) and close the lid tightly. Alcohol should cover the layer of berries by at least 2-3 cm. In the process of infusion, the alcohol level will decrease, this is normal.
Put the jar in a sunny place (on the windowsill) and leave for 14-16 days.
Strain the tincture through a sieve, then filter the liquid part through three layers of cheesecloth.
Mix water and sugar in a saucepan. Bring the mixture to a boil and cook for 3-5 minutes over low heat, removing the white foam. Then cool the syrup to room temperature.
Mix strawberry infusion and sugar syrup, pour the resulting drink into bottles. Our strawberry liqueur is almost ready, to improve the taste, it remains to let it brew.
Transfer the drink to a dark place at room temperature for 7 days. After aging, you can start tasting. Shelf life - up to 2 years.
Recipe for strawberry liqueur Xu Xu (XuXu)
It is worth noting right away that this recipe does not claim to be the original recipe that the manufacturer puts in its bottles. But the taste of the resulting liqueur is very similar to the original.
Ingredients
Strawberries - 0.5 kg
Vodka or alcohol (diluted to 40-45%) - 0.5 liters
Sugar - 250-300 g
Lemon - 1 pc.
Water - 200 ml
Cooking method
Rinse the strawberries, remove the stalks and cut them in half (if the berries are large, you can also cut them into quarters).
Pour strawberries into a liter jar and fill it with vodka or diluted. It is important that all berries are covered with vodka. You can take more of it and pour it to the very edges of the jar. Also add the juice of half a lemon to our infusion - it will give the drink a pleasant sourness.
We send the jar for 7-10 days to the windowsill, preferably with the sun. Then the infusion should be carefully drained through cheesecloth without squeezing the strawberries, and sugar should be added to the jar with berries. Cork the infusion and set it aside - we don't need it yet.
The jar with strawberries and sugar should be gently shaken several times and set aside for another 2-3 days until the sugar is completely dissolved. Drain the syrup, add 200 ml of water to the jar, stir and drain the remaining syrup again.
Mix strawberry infusion with syrup, pour into a jar and forget about it for another 3-5 days. During this time, the liquor will lighten and can be removed from the sediment, and then filtered.
As a result, you should get a delicious liqueur of a beautiful "strawberry" color. Its strength will not exceed 15%, but the taste and aroma are simply divine. It is better to drink the liquor chilled.
Recipe for strawberry liqueur with schnapps or brandy
Ingredients
Strawberries - 1.5 kg
Schnapps or brandy - 1 liter
Sugar - 200 g
Water - 200 ml
The method of preparation
Mash strawberries in a jar and cover them with alcohol for 10 days.
Then you need to prepare a syrup from 200 g of sugar and 200 ml of water: dissolve the sugar in water, heat and stir until the sugar is completely dissolved.
Cool the syrup and mix with the tincture.
Pour the finished strawberry liqueur into clean bottles and tightly cork. Store in the refrigerator for no more than a year.
A simple recipe for strawberry liqueur
Ingredients
Alcohol - 500 ml
Water - 500 ml
Sugar - 750 g
Strawberries - 500 g
The method of preparation
Wash the berries, let them dry. Then mash, place in a large container, pour alcohol and leave for 15 days.
Shake well every day.
Strain the tincture thoroughly.
Cook sugar syrup, let cool until warm and mix with strawberry alcohol.
Strain through folded cheesecloth or filter paper. Pour into bottles, store in a cool place.
