Mint syrup: 3 recipes at home

The classic mint syrup recipe

Ingredients
Mint leaves - 100 g
Granulated sugar - 500 g
Water - 1 glass
The method of preparation
Clean and thoroughly dried mint leaves are chopped into small pieces and placed in a bowl of suitable size.
Sprinkle the green mass with 250 grams of granulated sugar, mix, cover and leave on the table for 12 to 20 hours.
Sugar, having hydrophilic properties, extracts all the essential substances and juice from mint slices.
After the mass is infused, begin to prepare the syrup. To do this, mix the remaining sugar with water and boil until it thickens for 20 minutes.
After that, add candied mint to a saucepan with boiling liquid and turn off the heat.
Then, using a wooden spatula, gently stir the mass, achieving complete dissolution of the crystals. After that, the saucepan is covered with a lid.
The mass must cool naturally. It will take approximately 3 to 4 hours.
Beat the cooled mint puree with a blender until smooth. Put a sieve on a clean bowl, cover it with 3 to 4 layers of gauze cloth and begin the procedure of straining the aromatic mass.
If the use of mint syrup is planned for the next few months, then the sweet liquid is immediately put into jars.
If the finished syrup is to be stored for a long time, then it should be put on the fire again, boiled for a few minutes and poured into sterile bottles.
Recipe for mint syrup with citric acid
Ingredients
Mint sprigs - 150 g
Sugar - 500 g
Water - 250 ml
Citric acid - ½ h. л. л.
The method of preparation
In this recipe, the leaves are not cut off, but whole branches are used. They are cut at a distance of 15 - 25 centimeters from the top, washed and dried on a cloth.
Cut the prepared raw materials into several pieces, put them in a small saucepan and pour cool water over them.
Boil the contents of the bowl for 10 minutes under a tightly closed lid. Then the fire is turned off, and the mint broth is allowed to stand for 10 to 24 hours.
Mint should then be removed. To do this, squeeze it well with your hands. To make the broth clear, strain it through a very fine sieve lined with cheesecloth.
Add sugar to the clear broth and cook for 15 minutes. A minute before turning off the heat, add acid to the syrup.
When hot, the syrup is poured into small jars and closed with lids.
Dried mint syrup recipe from dried mint
Ingredients
Dried mint - 50 g
Sugar - 500 g
Water - 250 ml
The method of preparation
The raw materials are pre-mashed by hand and then poured with boiling water.
The bowl is tightly closed with a lid and wrapped in terry towels. In this form, the infusion should cool completely.
Strain the mass through a triple layer of cheesecloth. Add sugar to the flavored preparation and put on fire. Boiling time 10 - 15 minutes.
The thickened mass is bottled and sent to the cold.
