Strong wines: 10 recipes at home

Dessert drinks are good because they are much easier to prepare than table drinks.
Rowan and cherry fruits, grapes, currants of both types, fresh and dried apples, gooseberries are usually used as the basis for creating strong alcohol.
Tips before you start
If necessary, the drink is additionally flavored with strongly smelling plant extracts or spices.
Sometimes sugar syrup is used to make fortified wines.
To create high-strength beverages, the alcoholization operation is mandatory. It can be used at different stages by adding vodka (alcohol) to juice, fermented must or young wine.
Fortified wines are made by two methods: fermentation of juice with cultured/natural yeast or wort with pulp. To mature, place the drinks in closed containers, periodically pouring from one vessel to another. Aging for two or more years at t=14-16 °C.
Strong wine "Aroma of currant"
Ingredients
Black currants - 3 kg
Red currants - 4 kg
Gooseberries - 1 kg
Sugar - 9 kg
Vodka - 1 bottle
Boiled water - 3 liters
Yeast - 1 stick
The method of preparation
Wash and dry the fruits in advance, then pour them into a bottle, add sugar and water. Let the mixture brew for 50-60 days.
Drain the liquid through a gauze cloth.
Divide the wine into 2 halves. Pour vodka into the first one, seal the vessel with a cork and leave for 2 weeks. Add yeast to the second bottle, wrap the neck of the bottle with a cloth, let it ferment for 1 month or more until the end of the fermentation process.
Mix both parts and bottle the drink.
Strong wine "Apricot and berry"
Put the fruits in a 3-liter glass container as they ripen. The vessel is kept in the sun all this time, wrapping the neck with gauze cloth.
Ingredients
Strawberries - 1 kg
Raspberries - 1 kg
Black currant - 1 kg
Apricot - 1 kg
Cherries - 1 kg
Sugar - 2.5 kg
Vodka - 5 liters
The method of preparation
Pour the strawberries into a bowl and cover them with sugar (0.5 kg).
Lay out the rest of the fruit in layers, one by one, sprinkling each with sugar (0.5 kg each): apricots, raspberries, cherries, currants.
After adding the last berries, keep the vessel under the sun for another 14 days.
Pour the contents of the container with vodka, put a water seal, take the product to a cool place, such as a cellar, for 1 month.
Strain the wine, distribute it into small vessels, and leave for several months before serving.
Strong wine "Assorted"
Put the raw materials in a 5-liter container gradually, as they ripen. The fruits are pre-washed, cleaned of twigs, debris, and stalks. Pit cherries, plums, and cherries. Mash gooseberries and currants. Take early apples and pears, remove the seed parts, cut into small pieces.

Method of preparation
Put the fruits in the container one by one, pouring a glass of vodka over each layer, in the following order: strawberries, raspberries, black and red currants, gooseberries, cherries, cherries, plums, apples, pears.
Insist the mass until the end of autumn, strain, pour into bottles, seal, take to the cold.
Ginseng fortified wine
Thanks to the healing qualities of the plant, this drink is rich in nutrients and has a beneficial effect on the functioning of the brain and endocrine glands. The aerial parts of ginseng can be replaced with roots: about 4 grams of it are needed.
Ingredients
Alcohol - 500 ml
Ginseng stems and leaves - 20-30 g

The method of preparation
Insist ginseng on alcohol for 1-2 weeks.
Pour the infused liquid into the wine (20-30 ml of extract per 10 liters of drink).
Strong berry and fruit wine
The amount of raw materials determines the amount of other components. For 1 liter of apple juice, you need half a liter of blackcurrant juice, for 1 liter of wort - about 330 ml of alcohol and about 70 g of sugar. To extract the liquid, wash the currants, mash them, sprinkle with sugar and leave them in a glass container for 1-2 days.

The method of preparation
Add apple juice to the blackcurrant juice, leave the liquid for about a week in a closed container.
The wort is pressed, sugar and alcohol are put into it in the specified proportions, aged for 1 week.
Lighten the drink by draining it from the sediment.
Then the wine is poured into prepared containers, aged to taste in cool conditions for 3 months or more.
Wine from dried fruit
Ingredients
Dried cherries - 0.5 kg
Raisins - 0.4 kg
Sugar - 2 kg
Dried plums - 0.5 kg
Boiled water - 10 liters
Vodka - 1 bottle
The method of preparation
Mix all dried fruits, soak in water.
Pour sugar, leave the mass to ferment for a 3-month period.
Pass the drink through a cloth or gauze filter, pour in the vodka.
Shake, let it brew for a while, distribute in small vessels.
Wine "American style"
You can replace vodka with alcohol by halving the amount of alcohol (1 liter is needed).
Ingredients
Apple juice - 10 liters
Honeycomb - 1 kg
Vodka - 2 liters
Honey - 4 kg
Egg white - 4 pcs.
The method of preparation
Pour the juice into a large bowl, put honeycomb (without honey) in it, mix well, let it brew for about half a day.
Pass the liquid mass through a sieve, add honey to it, pour the contents into a fermentation container, put a water seal.
After 6 weeks, transfer the mass to another container.
Whip the whites to a state of airy foam, combine with vodka, put the mixture into the wort.
Seal the vessel tightly and place in a cool place for 1 year.
Original wine made from dried apples
To create a drink, it is better to take a mixture of sour and sweet fruits. You can prepare a product from fresh fruit in the same way.
Ingredients
Dried apples - 1 kg
Yeast - 25 g
Water - 1 liter
Alcohol - 0.5 liters
Sugar - 1.5 kg
The method of preparation
Grind dried apples, put them in a volumetric vessel, add ½ part of sugar, pour 1 liter of water heated to 80 °C, leave to saturate for 1 day.
Strain the infused fruit mass.
Dissolve the second part of the sugar in the remaining water, preheating it, add the yeast, and mix the syrup until smooth.
Pour the resulting solution into the apple infusion.
After 5 days, add alcohol to the wort, leave to infuse for another 5 days.
Filter young wine, let it mature for at least six months.
Rowan and apple wine
The drink is subjected to alcoholization according to the following scheme: for 1 liter of wine - ½ glass of vodka.
Ingredients
Apple juice - 2 liters
Rowan juice - 1 glass
Sugar - 4 cups
Water - 500 ml
Wine yeast - 1 package
Vodka - proportionally
The method of preparation
Mix two types of juice with sugar, pour in water.
Prepare wine yeast according to the instructions on the sachet, add to the juice.
Install a water seal on the neck of the vessel, leave the drink to ferment.
After the fermentation process (bubbling), strain off the liquid, add vodka according to the recommendations.
Allow the finished drink to mature for about 1 week and distribute it in small containers.
