11 Ratafia recipes at home

Ratafia - alcoholic beverages obtained by infusing ripe fruits and berries in 90° alcohol and adding sugar to the infusion. It is believed to be a type of liqueur (according to the Encyclopedia Britannica), characterized by lower sugar content and (relatively) higher strength.
Grape ratafia
Ingredients
Muscat grapes - 1 kg
Spice mixture - 2 tsp.
Sugar syrup - to taste
Alcohol - 1 liter
The method of preparation
For the spice mixture: 3 parts cinnamon, 2 parts star anise, 1/4 part cloves, 1/2 part nutmeg, 4 parts lemon zest, 1/2 part ginger, 1/2 part anise
Take the nutmeg grapes, crush the berries and put them in a bottle.
Pour the grapes with alcohol, add spices and leave in a warm place for 6-8 days, stirring constantly.
Then strain the contents of the bottle, filter, sweeten to taste and bottle.
Anise ratafia with spices
Ingredients
Alcohol - 1 liter
Water - 200 ml
Sugar - 200 g
Anise - 20-30 g
Lemon zest - 3 g
Cinnamon and cloves - 1 g each
The method of preparation
Pour alcohol into a jar, add spices and cover with a lid.
Leave in the sun for 3 days.
Carefully pour off the alcohol and strain.
Prepare sugar syrup, cool, strain, mix with infused alcohol and strain again.
Insist 7 days before use.
Ratafia cherry
Ingredients
Alcohol - 1 liter alcohol
Ripe cherries - 2 kg
Sugar - 600 g
Method of preparation
Mash clean dry berries and squeeze the juice thoroughly.
Mix with vodka and sugar, let stand for 5 days, filter well and pour into bottles for storage.
Clove ratafia
Ingredients
Alcohol - 1 liter alcohol
Water - 300 ml
Sugar - 200 g of sugar
Cloves - 8 g
Cinnamon and lemon zest - 2 g each
Method of preparation
Coarsely grind the spices, pour into a container with alcohol and leave at room temperature under a lid for 20-22 days.
Drain the alcohol well.
Cook the sugar syrup. Cool, strain, mix with alcohol and strain again.
Insist for 7 days, pour into bottles for storage, tightly seal.
Blackberry spiced ratafia
Ingredients
Alcohol - 1 liter
Water - 250 ml
Blackberries - 600 g
Sugar - 100 g
Ground cinnamon, chopped nutmeg, grated ginger - 1 g each
The method of preparation
Mash clean dry berries, pour alcohol, add spices and leave under the lid for 10 days.
Drain the tincture, add cooled and strained sugar syrup, stir and strain again.
Pour into bottles, cork.
Ratafia cranberry
Ingredients
Alcohol - 1 liter
Cranberries - 600 g
Sugar - 300 g
The method of preparation
Rinse the cranberries, let them drain (you can use frozen berries) and mash them thoroughly.
Pour alcohol, add sugar, mix.
Close the container with the liquid, put it in a warm place for 7-10 days.
Filter the finished ratafia well, bottle and cork it.
Lemon ratafia
Ingredients
Alcohol - 1 liter
Water - 200 ml
Sugar - 200 g
Lemon zest - 60-70 g
The method of preparation
Chop the zest and pour into a jar. Pour alcohol, leave under the lid for 60-90 days in a warm place.
Prepare the sugar syrup.
Strain and mix the tincture and sugar syrup, leave for 7 days, strain again, pour into clean bottles, and seal tightly.
Store in a cool, dark place.
Ratafia with honey and ginger
Ingredients
Alcohol - 1 liter
Honey - 300 g
Chopped ginger - 5 g
Ground cinnamon and hot pepper - a pinch each
The method of preparation
Pour spices into honey and mix.
Pour into a vessel with alcohol, leave in a cool place for 30-45 days.
Shake the container well every day.
Filter the finished ratafia, bottle, cork and keep in a cold place.
Mint ratafia
Ingredients
Alcohol - 1 liter
Water - 200 ml
Sugar - 200 g
Dried mint - 30-40 g
Method of preparation
Pour mint into a container with alcohol and leave in the sun for 3 days.
Prepare sugar syrup, strain hot, mix with strained tincture and strain again.
Insist for 7 days, pour the finished ratafia into a bottle for storage, tightly cork.
Ratafia fruit and berry tincture with cloves
Ingredients
Alcohol - 1.6 liters
Cherry juice - 1.2 liters
Clove seeds - 50 pcs.
Dried plums - 50 pcs.
The method of preparation
Pour cherry juice into a vessel with alcohol, stir and add cloves and plums.
Cover, keep in a warm place for 7 days.
Strain the ratafia well, pour into dry bottles, cork.
Ratafia "garden bouquet"
Ingredients
Alcohol - 2-3 liters
Pitted cherries - 1 kg
Raspberries - 500 g
Red currants - 500 g
Sugar - 2.5 kg
Cinnamon and cloves - 3-4 g each
The method of preparation
Mash the berries and let stand for 5-6 hours, then squeeze the juice out of them (you can use a juicer).
Pour sugar into the juice, stir and leave until completely dissolved.
After that, mix the sweetened juice with alcohol, add cinnamon and cloves, bottle, cork and leave in the sun for about a month, shaking every 2-3 days.
Then strain the ratafia, bottle it and store it in the refrigerator or cellar.
