Absinthe La Pipette Verte: a guide to alcohol

French variation of non-canonical absinthe with a low alcohol content, only 55%. Since the amount of thujone is not officially declared, Vzboltai cannot recommend this absinthe for drinking by the glass by classical methods, but for cocktails it will definitely come in handy, but given its price, the idea seems questionable.
This alcohol has a rich, spicy flavor with notes of wormwood, fennel, liquorice, coriander, anise, lemon balm, and hyssop. The aftertaste is long and warming. The spicy aroma of absinthe is revealed by a harmonious combination of spices, herbs and spices.
For the production of La Pipette Verte absinthe, such herbal ingredients as green anise, fennel, wormwood, coriander, star anise, hyssop are used. Each of them is macerated in neutral ethyl alcohol at a temperature of 45°C. At the next stage of production, all flavored spirits are mixed and macerated again to obtain color, along with lemon balm, hyssop and veronica.

The Distillerie des Moisans estate owns 60 hectares of vineyards, of which 30 are occupied by the Uni Blanc variety in Fen Bois. This region is known for the delicacy of its spirits and the smoothness of their flavor when matured. In the huge light and spacious cellar of Distillerie de Moisons, there are 12 distillation cubes with a volume of 25 hectoliters, the main work at the distillery falls on the period from October to March.
The wines are fermented in temperature-controlled vats, and the distillation process lasts continuously for a whole day. To control this process, the distillation master even sleeps right there, carefully checking all the indicators every hour. Only after the second distillation is the spirit considered worthy of being put into barrels and becoming cognac.
More than 2000 barrels of 350 liters each - this is the real treasure of Distillerie des Moisans. This stock includes very old cognacs that are waiting for their time, maturing in peace and quiet in dark cellars. Today Distillerie de Moisons is the owner of three brands of high-quality cognacs: "Deau", "Moisans" and "Roland Bru".
The history of Distillerie des Moisans
It all started with the acquisition of vineyards and a distillery in the village of Moizon, where almost all the houses are built of beautiful white patterned limestone stones "sireuil". It is they who give the entire surrounding space brightness and purity. Limestone is also the best component of the local soil, which contributes to the cultivation of strong vines, allowing their roots to penetrate deep into the ground, sometimes more than 10 meters, to find nutrients.
After moving to Moisons in the 60s of the XX century, Roland Brew acquired vineyards here and did a tremendous job to achieve his goal: to make Moisans cognacs a real jewel in the world of spirits. For many years, Roland sold his cognac spirits to other producers, accumulating knowledge and experience and dreaming of the day when he would release his own cognac.
In 1997, after his death, the company was taken over by Véronique Bru-Legare and her son Roland Legare, with Jerome Matteoli, a significant figure in the world of cognac, as their consultant. They remain faithful to family traditions and are convinced that the quality of the grapes plays a crucial role in creating the character of the cognac.
