Juniper tincture is no less popular in our country than cherry or cranberry tincture. But if you are preparing it for the first time, you should choose the berry itself very carefully. Because some of them are very dangerous for our health. The most common of them are Siberian and Cossack junipers. The latter contains deadly sabin oil in its fruits.
How to distinguish edible varieties of berries from poisonous ones
An edible berry has three seeds, and a poisonous berry has only two.
When rubbing the edible juniper cone, a pronounced smell of turpentine will appear.
The leaves on a poisonous juniper bush look like fish scales, and edible ones look like needles.
If we talk about the alcoholic base, it is better to use diluted alcohol to the desired strength, but you can also use high-quality double-distilled moonshine or, in extreme cases, store vodka.
And before moving on to the recipes, I would like to once again emphasize the right choice of raw materials. If you are not sure about the edibility of the berry, then it is better to prepare any other tincture.
Simple juniper tincture
Ingredients
Juniper berries - 10 pcs.
Vodka - 500 ml
Sugar syrup - optional
The method of preparation
The berries should first be crushed in a mortar and then transferred to a glass container.
Pour in the alcohol base and leave for two weeks in a dark place at room temperature.
After two weeks, you can add a little sweetener and leave for another 2-3 days under the same conditions.
The finished tincture should be filtered, filtered and bottled.
Fragrant juniper tincture with zest
This drink is prepared in two stages: the concentrate and the tincture itself.
Ingredients for the concentrate
Juniper berries - 50 g
Alcohol / moonshine (50%) - 2 liters
Zest of four oranges
Method of preparation
Grind juniper and pour 1 liter of alcohol.
In a separate container, pour the orange zest with the remaining alcohol.
Leave both mixtures in a dark place for one week
Ingredients for the tincture
Fructose can be replaced with granulated sugar (1.5 teaspoons)
Juniper concentrate - 100 ml
Citrus concentrate - 100 ml
Alcohol 45% - 1 liter
Fructose - 1 tsp.
The method of preparation
Mix all ingredients in one container and take a sample.
If the drink did not seem as rich as you wanted, you can add another 100 ml of any of the concentrates.
After adding an additional amount of concentrate, the tincture must be kept for another 10 days.
Filter and bottle the finished drink.
Spicy juniper tincture
Ingredients
Juniper fruits - 2 tbsp.
Alcohol 50% - 2 liters
Mandarin - 2 pieces.
Orange - 2 pieces.
Kernels of three walnuts
Granulated sugar - 100 g
Lemon juice - 0.5 h. л. л.
Water - 100 ml
The method of preparation
First, we need to prepare all the ingredients: chop the juniper and nuts, peel the zest from oranges and tangerines and squeeze the juice.
Mix the prepared ingredients and the alcohol base in a glass container. Leave for three weeks in a dark room at room temperature.
After the end of the exposure, the tincture must be filtered.
Cooking caramel syrup. Mix granulated sugar and lemon juice in a saucepan. As soon as the sugar turns into a thick mass, add water. Over low heat, cook the mass until smooth, stirring constantly.
Add the tincture to the cooled syrup, shake well, and then filter the drink.
Before tasting, the finished product should be kept in the refrigerator for 3-4 days and then bottled.
Spicy juniper tincture
The ingredients
Vodka - 1 liter
Dill seeds - 50 g
Juniper berries - 40 g
Horseradish root - 40 g
Coarse salt - 10 g
Ground black pepper - 2 g
Method of preparation
Grind the horseradish root, mix all the ingredients and pour into a bowl.
Pour vodka, cork, shake several times and leave in a warm place for 14-15 days.
Shake the container with the contents every 2-3 days.
Strain, filter and store the finished tincture under a tight lid.
Ratafia made from juniper berries
Ingredients
Juniper berries - 40 g
Spice mixture - 2 h. л.
Sugar syrup - 200 ml
Vodka - 1 liter
The method of preparation
For the spicy mixture: 1/2 ч. л. cinnamon, 1/2 tsp. cloves 1/4 h. л. nutmeg, 1/8 h. л. coriander, 1/8 tsp., 1/2 ч. л. allspice with peas.
Mix the juniper berries with the spice mixture, put them in a bottle, add sugar syrup, pour strong vodka and leave for 4-5 weeks in a warm place.
Then strain, filter and bottle. The longer this ratafia stands, the better the flavor and aroma.
Juniper honey liqueur
Ingredients
Juniper berries - 20 g
Honey - 100 g
Vodka - 2 liters
Water - 200 ml
The method of preparation
Pour juniper berries into cold water, put on fire and bring to a boil.
Cook over low heat for 30 minutes, strain when hot, cool the broth well.
Pour the broth into a bowl with honey, stir until smooth, add vodka and mix well again.
Let it brew for 6 days, pour (you can strain it again) into bottles for storage, keep in a cool, dark place.
