Prune liqueur: 2 recipes at home

Prunes - a very interesting product. It is most often used in cooking. But what about alcoholic beverages?

Someone will say that this is impossible. But those who have tried this dried fruit liqueur at least once do not miss the opportunity to enjoy this drink at any time of the year.

A few words about the liqueur

Prune liqueur has a mild flavor with light smoked notes and a delicate smoky aroma. You can use any kind of dried fruit for its preparation, the main thing is that they should be free of white coating and visible signs of rot. You should also refrain from using overdried prunes, as they have long since lost their beneficial properties and flavor.

The alcohol base can be food alcohol, vodka, moonshine or inexpensive cognac. The cognac liqueur has woody notes that are complemented by a light flavor of dried fruit.

A simple liqueur made from prunes

In this recipe, it is difficult to specify the exact amount of granulated sugar, since the sweetness of the main ingredient is different.

You should add the sweetener completely, relying on your taste buds.

Ingredients

  1. Prunes - 600 g

  2. Alcohol - 500 ml

  3. Vodka - 2 liters

  4. Water - about 2.5 liters

  5. Add granulated sugar to taste

The method of preparation

  1. Dried fruits should be washed, pitted and cut into small cubes.

  2. Pour the prepared prunes into a glass jar and pour in two types of alcohol.

  3. Close the lid and transfer the container to a dark place for 1.5 months. Shake its contents from time to time.

  4. After the expiration of the aging period, pour off the infusion and pass it through a filter.

  5. Pour the prunes with water (the amount of water should be equal to the drained liquid in the previous step). Leave for three days under the same conditions.

  6. After three days, drain the flavored water, mix it with the tincture and take a sample.

  7. Add the right amount of sugar, mix, filter through a cotton or coffee filter.

  8. Pour the finished liqueur into bottles, cool and serve.

Flavored prune liqueur

To prevent the liqueur from turning out to be too sweet, it is recommended to add only 50 g of granulated sugar at the initial stage, and sweeten it according to your taste preferences at the final stage.

Ingredients

  1. Pitted prunes - 150 g

  2. Vodka - 500 ml

  3. Lemon - 1 pc.

  4. Granulated sugar - 50-150 g

  5. Vanillin - a small pinch

The method of preparation

  1. Pour boiling water over the lemon, and while it dries, we prepare the prunes.

  2. Pour boiling water over dried fruits, leave for about 3 minutes, and then rinse under cold, running water.

  3. Remove the zest from the lemon and squeeze out the juice of half the fruit.

  4. Put the following ingredients in a glass container: prunes, lemon zest and juice, vanilla and granulated sugar.

  5. Pour in the prepared alcohol, shake well and leave for 15 days in a dark place at room temperature. Shake the contents of the container once every few days.

  6. Strain the resulting drink, take a sample and add more sugar if necessary.

  7. Then pass the prune liqueur through a filter and bottle it.

  8. The strength of the finished product is about 25-33%. Storing the drink in the refrigerator or cellar extends its shelf life to two years.
