Plum liqueur: 8 recipes at home

Plum liqueur is a wonderful digestif that can be served both neat and in addition to ice cream, coffee and desserts. The sugar content, as in other fruit and vegetable liqueurs, ranges from 25 to 60%.

The most suitable varieties for making liqueur at home are table plum varieties - renclode, mirabelle or Hungarian.

Classic plum liqueur

In the classic recipe, vodka can be replaced with moonshine or alcohol diluted to 40%. To make liqueur, it is best to take ripe and aromatic fruits.

Ingredients

  1. Plums - 1 kg

  2. Granulated sugar - 350 g

  3. Water - 250 ml + 1 liter for blanching

  4. Vodka - 1 л

  5. Cold water with ice

The method of preparation

  1. Wash the plum thoroughly and pierce it with a toothpick up to the bone in 3-4 places.

  2. Pour 1 liter of water into a saucepan and bring to a boil. Then put 2-3 plums in a slotted spoon and dip them in boiling water for 15-20 seconds, then transfer them to a bowl of ice water. Blanch the rest of the plums according to this principle.

  3. Cooking classic sugar syrup.

  4. After the syrup has cooled, mix it with the prepared alcohol and filter it through a homemade or purchased filter.

  5. Put the blanched plums in a glass container and pour them with filtered vodka and sugar. Insist in a cool place for 90 days.

  6. After 3 months, strain the finished plum liqueur again and pour it into glass bottles. Store the finished product in a cool place.

Spiced plum liqueur

Ingredients

  1. Plums - 450 g

  2. Granulated sugar - 240 g

  3. Vodka - 500 ml

  4. Cloves - 3 pcs.

  5. Cinnamon - half a stick (you can use ground, one pinch will be enough)

The method of preparation

  1. Plums should be thoroughly washed and pitted.

  2. Put the prepared plums in a glass container, add granulated sugar, cloves, cinnamon and pour vodka. Insist in a dark place for 90 days, shake the jar once every 2-3 days.

  3. After 3 months, filter the plum liqueur through a homemade or purchased filter. Pour into glass bottles and leave for another 14 days. Store the finished product in the refrigerator or cellar.

Plum liqueur "double alcohol"

Ingredients

  1. Plums - 900 g

  2. Granulated sugar - 500 g

  3. Cognac - 150 ml

  4. Vodka - 500 ml

The method of preparation

  1. Wash the plums thoroughly, remove the pits and cut them into small pieces (you can pass them through a meat grinder).

  2. Put the prepared plum in a glass jar, add granulated sugar and pour vodka and cognac. Let the liquor stand in a dark place for 60 days and periodically shake the jar until the sugar is completely dissolved.

  3. After two months, filter the plum liqueur through a homemade or purchased filter and pour into glass bottles. Let the finished product brew for another 30-60 days and you can start tasting. Store in a cool, dark place.

Plum liqueur in white rum

Ingredients

  1. Plums (red or blue) - 900 g

  2. White rum - 750 ml

  3. Granulated sugar - 500 g

Method of preparation

  1. Wash the plums thoroughly, remove the pits and cut them into medium-sized pieces.

  2. Put the prepared plum in a glass jar, add granulated sugar and pour white rum. Let the liquor infuse in a dark place for 4 months, the first 30 days you need to shake the contents of the container daily.

  3. After infusion, the plum liqueur must be filtered through a homemade or purchased filter and poured into glass bottles.

  4. Store the finished product in a cool dark place, but you can start tasting it after two weeks.

Spicy plum liqueur with plum leaves

Ingredients

  1. Plums - 1 kg

  2. Granulated sugar - 500 g

  3. Plum leaves - 200 g

  4. Vodka - 750 ml

  5. Cloves - 3 pcs.

  6. Nutmeg - 1-2 pieces.

  7. Vanilla - 1 pinch

The method of preparation

  1. Plums must be thoroughly washed and pitted.

  2. Put the prepared plums in a glass vessel, add granulated sugar, cloves, nutmeg, vanilla and plum leaves. Leave for 10 days in a warm place.

  3. After 10 days, add vodka to the liquor and leave in a dark place for 1.5 months.

  4. After this time, filter the plum liqueur through a homemade or purchased filter and pour into glass bottles.

  5. Store the finished product in the refrigerator or cellar.

An original liqueur made from plum seeds

Ingredients

  1. Dry plum pits - 250 g

  2. Granulated sugar - 1 kg

  3. Water - 1 liter

  4. Vodka - 750 ml

Method of preparation

  1. Rinse the pits well, dry them with paper towels and grind them in a blender.

  2. Put the prepared pits in a glass container and pour vodka over them. Leave for 1 month in a dark place.

  3. Filter the infused vodka through a homemade or purchased filter.

  4. Cooking classic sugar syrup.

  5. After the syrup has completely cooled, mix it with filtered tincture. Pour the finished liquor into glass bottles and let it brew for another six months.

  6. Store the liquor in a cool place.

Japanese plum liqueur

The traditional Japanese liqueur Umeshu is made from green plums of the Ume variety (very similar to our unripe apricots) and candis sugar, also called candy sugar, because it is used to make candy.

The Japanese rice liquor seto is used as an alcoholic base, but ordinary vodka can also be used.

We will try to make a Japanese plum liqueur in the style of "fusion", adapting it to our products, leaving only plums from the classic recipe.

Ingredients

  1. Green plums - 1 kg

  2. Granulated sugar - 500 g

  3. Vodka - 1,8 л

The method of preparation

  1. Green plums must be washed, dried well and the tails removed with a toothpick.

  2. Put prepared plums and sugar in layers in a large glass container. Add vodka and let it stand in a dark place for 6 months, sometimes you need to shake the container gently.

  3. Once 6 months have passed, filter the finished plum liqueur using a homemade or purchased filter. Pour into glass bottles.

  4. Store the finished product in a cool place.

English plum liqueur with berries and gin

We took the Hedgerow liqueur as the basis for the preparation, which means a hedge around the house or along the road, where fruit and berry bushes are often planted. Any seasonal berries can be used in this recipe.

Ingredients

  1. Plums - 250 g

  2. Raspberries - 100 g

  3. Blackberry - 100 g

  4. Rose hips - 10 g

  5. Granulated sugar - 350 g

  6. Gin - 500 ml

The method of preparation

  1. Wash and dry the plums, raspberries and blackberries thoroughly with paper towels.

  2. Put the prepared fruits, berries, rose hips, granulated sugar in a glass container and pour gin. Leave to stand in a cool, dark place for 12 months.

  3. Shake the container periodically in the first month.

  4. After a year, strain the plum liqueur through a fine strainer and filter through a homemade or purchased filter. Pour the finished product into glass bottles and leave for another 14 days.

  5. Store the liquor in a cool, dark place.
