Blueberry wine: 2 recipes at home

Blueberry wine has a pleasant purple hue and a soft, velvety taste.

Before starting cooking, the berries must be sorted, cleaned of debris and leaves, do not wash.

A simple recipe for blueberry wine

To infuse the wine, you will need a large glass container or 2 smaller vessels so that part of the space in them (about ¼) remains unfilled.

Ingredients

  1. Blueberries - 4 kg

  2. Granulated sugar - 2 kg

  3. Water - 6 liters

The method of preparation

  1. Grind the blueberries with a wooden pestle (pestle), squeeze through a sieve or cheesecloth. Put the resulting juice in the refrigerator.

  2. Pour water into the mass of berries, insist the pulp for 1 day in a place protected from light.

  3. Strain the infusion through cheesecloth and add the remaining berry juice to it.

  4. Pour granulated sugar into the resulting liquid, mix thoroughly.

  5. Pour the syrup into a glass vessel, leaving part of the container unfilled, close the neck with a water seal.

  6. Place the container in a dark place and keep it there at a temperature of 23-25 °C until the end of active fermentation (until the bubbles are released).

  7. Remove the wine from the sediment through a hose, pour into a clean container, store for another 2 months in a dark place.

  8. Pour the drink into bottles, seal with a cork.

Recipe for blueberry wine with honey

The recommended amount of sugar can be increased to obtain semi-sweet (0.5 kg) or sweet (1 kg) wine. If necessary, add raisins (100 g) and citric acid (15 g) to the wort.

Ingredients

  1. Blueberries - 4 kg

  2. Sugar - 1.5 kg

  3. Water - 3.5 liters

  4. Linden honey - 300 g

The method of preparation

  1. Put the peeled berries in a colander, wash them thoroughly, wait until the water drains, and mash the fruit with your hands.

  2. Transfer the resulting mass and juice to a ten-liter glass container, pour in 2 liters of water.

  3. Tie the neck of the vessel with gauze, place the container in a dark corner with a temperature of about 22 °C for 4-5 days.

  4. After aging, carefully strain the infusion through 3-5 layers of clean gauze.

  5. Squeeze the pulp well and discard it, put the resulting juice in a clean container.

  6. Dissolve honey and sugar in one and a half liters of warm purified water, add to the blueberry infusion.

  7. Put a water seal on the neck of the bottle, put the vessel in a dark, cool room until fermentation is complete (20-50 days).

  8. Decant the wine through a siphon or hose into a clean container, reattach the cork, keep in the cold for 3 months. Do this carefully so as not to touch the sediment.

  9. Pour the finished drink into bottles, seal with a cork.
