Chablis wine: history, taste overview, types

Chablis - the region of northern Burgundy, rich in vineyards and poor in the warm French sun. In such a cool climate, chardonnay grows well, which is used in the production of the wine of the same name. Due to the harsh climate, the wine is poor in fruit and berry flavors and aromas, but this is what makes it special: sommeliers appreciate this white French wine for its delicate freshness and lightness.

A little history

The production of chablis wine began in the days of the Roman Empire. Chardonnay was grown by monks to make the wine needed for communion and other church rites. Later, viticulture and winemaking began to become increasingly popular and spread throughout Burgundy.

But the prosperity came to an end. In 1950, a terrible phylloxera epidemic destroyed most of Burgundy's vineyards, which greatly affected the economy of the region and the state. Chablis has not yet recovered from such a severe blow, and very few areas for the vine have been restored since then.

Organoleptic properties

This wine has a light texture with a sourness that is not clear to everyone. The color is from almost transparent to rich golden. The taste is refreshing, vigorous, vaguely reminiscent of green apples. Perfect for quenching your thirst on particularly hot summer evenings.

Feature of production

From the very beginning, poor winegrowers could not afford to age wine in oak barrels, so the drink usually matured in stainless steel canisters or containers. Chablis aged in an oak barrel is very easy to distinguish from the original: you will feel woody notes in the drink, which do not fit into the refreshing bouquet of the wine.

Types of Chablis

  1. Petit Chablis

    More acidic than the original wine. The color turns to green. Does not attract the interest of large masses due to the specific taste, but petit Chablis has fans.

  2. Chablis

    A wine ideal for aging. Some sommeliers believe that the amazing and unique taste of Chablis is revealed only after 10 years of aging, but this is disputed.

  3. Chablis premier cru

    Wines that reveal their potential in the fifth year of aging. Pleasant nutty honey aroma and flavor.

Chablis will harmoniously complement meat dishes, gracefully emphasize the taste of oysters and other seafood and fish. This wine sounds exquisite with soft cheeses, salads, grilled asparagus. Drink chilled to 12-14 degrees, from tulip glasses.
