Fermenter: what it is and how it should be + scheme

Fermenter is a closed container, usually cylindrical in shape. Inside this tank, the medium (product) and bacteria are mixed, and the fermentation process (or, in scientific terms, fermentation) takes place. Oxygenated air is passed through the medium, and during mixing, the mass becomes homogeneous.

A very important factor in this process is the continuous maintenance of a specific temperature, which is controlled and maintained by water or steam passing through the heat exchanger tubes.

Why you need a fermenter

The direct purpose of fermenters is the fermentation of different material. Fruit, sugar or grain raw materials are used in this process. In fact, the quality of the current fermentation process directly depends on the fermentation unit.

The characteristic features of the device design guarantee the impermeability of the container, stability of the fermentation process, and among other things, practicality in maintenance.

What is the fermenter made of

The quality of the produced alcoholic beverage is directly influenced by the quality of the tank, in which the fermentation process takes place. Various materials are used for these purposes, the main ones being:

  1. Heat-resistant glass.

  2. High-quality food grade plastic.

  3. Stainless steel.

Stainless steel fermenters have received the greatest recommendations. And all because stainless steel is very widely used in the food industry and meets all sanitary standards, and, in addition, is used in medicine.

Standard fermenters are vertical or horizontal (depending on the customer's needs) tanks of various capacities (small from 1 to 10 liters, medium 35-150 liters, multi-tonnage over 1000 liters) with a minimum number of fittings and transfer devices.

Use of the fermenter in the production of alcohol

The fermenter was invented for the purpose of producing beverages with natural gasification. An efficient fermentation process produces beverages such as beer and kvass. Fermenters are also intensively used in the manufacture of wines, more specifically for the production of sparkling wines. The fermentation of grape juice takes place in fermentation tanks, and after that the resulting material is poured into bottles for further champagne.

Fermenters are also considered to be a very important and significant attribute of any experienced moonshiner. The fermentation (fermentation) procedure for moonshine takes place directly in such containers.

What should be equipped with a basic fermenter

In the diagram above the most a high-quality fermenter (to buy a ready-made one, focus on it), but if you have little money, you can get by with just the necessary set:

  1. Scale, handles and tap - to measure and regulate the temperature, the amount of blown air and the pressure from the inside.

  2. The cylindrical tank should be equipped with spherical lids and auxiliary cooling jackets.

  3. Also, the lid needs a water seal, which allows to get rid of excess gas, and at the same time not to disturb the future beverage, and, in addition, prevents air from getting inside. However, it is necessary to make sure that moisture that may accumulate on the water seal does not end up in the tank. This can cause infection of the beverage and, as a result, deterioration of its quality.

  4. In the fermenter during the fermentation process, you can not do without such special equipment as a rubber seal and a rubber lid with a hole for a water seal.

  5. For the continuous process of bacteria cultivation, fermenters are additionally equipped with tanks for storing the components of the culture medium, as well as pumps, in order to constantly feed them into the device.
