Ginger beer: 5 recipes at home

Ginger beer "Lemon-yeast"
The fermentation container must be pre-washed and sterilized. Instead of lemon, you can use lime juice or include spices (cloves, anise).
Ingredients
Sugar - 1 cup
Ginger root - 50 g
Lemon juice - ½ cup
Dry yeast - ½ tsp.
Water - 2 liters
Method of preparation
Peel the ginger, grate it, put it in a glass bowl.
Mix yeast and sugar with ginger mass.
Add lemon juice to the mixture and mix all the ingredients thoroughly.
Pour water into the resulting gruel, put the container in a warm place for fermentation.
After 2 days, strain the drink and bottle it.
Ginger beer with raisins
It is better to use a sterilized glass jar as a fermentation container.
Ingredients
Ginger - 0.2 kg
Lemon - 2 pieces.
Sugar - 3 cups
Raisins - ½ cup
Water - 4 liters
The method of preparation
Cut off a small piece of ginger root (about 2 cm), peel it, grate it to make 1 tbsp. ginger root. л. of pulp.
Squeeze the juice of 1 lemon into a jar, add the citrus pulp, raisins and ginger gruel.
Pour the mixture with 2 cups of water, cover the vessel with a gauze cloth, leave it warm.
After 3 days, "feed" the drink for 2 tsp. sugar and 1 tsp. grated ginger, mix thoroughly with a sterile spoon.
Add the "top dressing" daily for 1 week, strain the liquid on the 10th day.
Prepare syrup by dissolving 2 cups of sugar in 0.6 liters of boiling water, add it to the drink.
Squeeze the juice of the second lemon into the remaining water, dilute the ginger beer with this liquid.
Stir the drink, pour into small containers, let it ripen in the refrigerator for 4 days.
Wine-based ginger beer
If desired, you can sweeten the drink with powdered sugar and/or dilute with citrus juice (from half a lime or lemon).
Ingredients
Ginger - 30 g
White wine - 0.2 liters
Water - 4 liters
Dry yeast - 15 g
Method of preparation
Chop ginger, crush it, combine with sugar.
Boil water, cool slightly, add to the ginger mass.
Wait for the liquid to cool to 30 °C, add the yeast.
After 2-3 hours pour the ginger drink into the fermentation container and install a water seal.
Wait for 2 days, pass the beer through a cheesecloth filter, add wine, bottle, cork, and refrigerate.
Taste after 1 day.
Classic non-alcoholic ginger beer
Pepper can be replaced with 1 bay leaf or any spices to taste, sugar with honey.
Ingredients
Ginger - 0.4 kg
Cane sugar - 1.5 cups
Lemon - 2 pieces.
Black peppercorns - 8 pcs.
Sparkling water - 2 liters
Plain water - 4 glasses
The method of preparation
Grate or finely chop the peeled ginger root.
Cut off the top peel of citrus fruits.
Pour non-carbonated water into a suitable saucepan, add the ginger mass, pepper, zest.
Boil the mixture, cook under a closed lid for 10 minutes over low heat.
Sweeten the liquid with sugar, stir, cook for another quarter of an hour with the lid open.
Strain the drink through a cloth, let it cool, and pour it into bottles, filling them to ¼ of their volume.
Dilute the concentrate with sparkling water, adding it to the bottles almost to the top, leaving only the neck free.
Non-alcoholic ginger beer "Express" Non-alcoholic ginger beer "Express"
If desired, mint and pepper can be replaced with cloves (1-2 buds) or spicy herbs to your liking.
Ingredients
Lemon - 2 pcs.
Ginger - 0.3 kg
Brown sugar - 1 cup
Peppercorns - 6-7 pieces.
Mint / lemon balm - 1-2 sprigs
Mineral water - 2 liters
Method of preparation
Squeeze the juice from the lemons, grind the ginger and zest with a grater.
Dissolve sugar in citrus juice, add ginger-lemon mixture, pepper and mint.
Pour mineral water over the mixture, let the drink stand for at least about half an hour.
Strain the beer, pour into a bottle, cool and taste.
