Liqueur from chokeberry: 3 recipes at home

Aromatic liqueur from chokeberry

For this recipe, it is better to use mountain ash that was picked after the first frost, then it becomes sweeter and less tart.

Ingredients

  1. Black mountain ash - 1 kg

  2. Food grade alcohol (96%) - 500 ml

  3. The vodka - 500 ml

  4. Granulated sugar - 500 g

  5. Water - 250 ml

  6. Cloves - 5 pcs.

  7. Half a vanilla pod

  8. Zest of one lemon

  9. Zest of one orange

Method of preparation

  1. If for some reason you picked the prunes before the first frost, then put them in the freezer for a few days.

  2. Then defrost, mash a little and transfer to a container that will be used for further preparation of the liqueur.

  3. Now throw all the spicy ingredients (zest, vanilla and cloves) into the jar, pour in all the prepared alcohol, mix thoroughly and leave to infuse for 30 days in a dark and cool room.

  4. After a month, drain the infusion, and squeeze the berries through cheesecloth.

  5. Cook basic sugar syrup and cool it to room temperature.

  6. Mix the rowan infusion and sugar syrup, shake well and, after filtering, pour it into bottles (preferably made of dark glass).

  7. Now let's move on to the "aging" stage, to do this, leave the drink in a dark and fairly cool place for 3-6 months.

  8. After saturation and aging of the liquor, you can proceed to tasting.

Chokeberry liqueur with rosemary and cherry leaves

Ingredients

  1. Chokeberry - 1 kg

  2. Food alcohol - 500 ml

  3. Sugar - 1 kg

  4. Water - 1 liter

  5. Cherry leaves - 130 pcs.

  6. A small sprig of rosemary - 1 pc.

  7. Vanilla sugar - 8 g

  8. Citric acid - 2 tsp.

  9. Medium orange - 1 pc.

The method of preparation

  1. Pour the washed black mountain ash into a pan with a thick bottom, add cherry leaves, rosemary and water. Bring to a boil and simmer for another 10 minutes.

  2. Now add granulated sugar, citric acid and continue cooking for another 10 minutes.

  3. Squeeze the juice out of the orange and add it to the mountain ash together with vanilla. Stir, remove from heat, cool to room temperature, and then put the pan in the refrigerator for a day.

  4. After a day, strain the aromatic broth, mix it with food alcohol and pour it into a bottle of a suitable size.

  5. Now the liqueur needs to be infused for about 2-3 months in a dark, cool place.

  6. After this time, filter the finished chokeberry drink and proceed to tasting.

Spicy liqueur from black chokeberry

Ingredients

  1. Black mountain ash - 3 kg

  2. Alcohol (60-75%) - 700 ml

  3. Water - 500 ml

  4. Granulated sugar - 1 kg

  5. Honey - 4 tbsp.

  6. Vanilla pod - 1 pc.

  7. Cloves - 5 buds

  8. The juice of one lemon

The method of preparation

  1. Transfer the berry to a glass jar (if the rowan was picked before the first frost, then repeat step 1 from the first recipe), add sugar, vanilla and cloves. Let it brew for 3 weeks in a dark and cool place, shaking occasionally.

  2. After this time, it is necessary to drain the alcohol tincture, and pour the berries with water and leave for 2-3 hours.

  3. Then pour off the water and mix it with the tincture.

  4. After 14 days, add lemon juice, honey to the liquid and shake well. Let it brew for about six months.

  5. Filter and bottle the finished drink before tasting.
