Wonderful aroma, divine taste - all this is cherry syrup. The recipes are extremely simple, and the scope of application is quite wide.

Pitted cherry syrup

Ingredients

  1. Cherries - 2 kg

  2. Sugar - 2.5 kg

  3. Water - 7 glasses

The method of preparation

  1. Wash the berries several times and dry them slightly, put them in a saucepan.

  2. Sprinkle with sugar, pour in water, stir and bring to a boil.

  3. Cook the composition for at least 2.5-3 hours over low heat, constantly skimming off the foam. As soon as it stops appearing, this is a signal that the product is ready.

  4. Strain the resulting liquid through cheesecloth, cover with a towel and leave to stand at room temperature for a day.

  5. After a day, strain again, boil, leave for 30 minutes, pour into sterile jars and close.

Cherry juice syrup with citric acid

Ingredients

  1. Cherry juice - 500 ml

  2. Sugar - 600 g

  3. Citric acid - ½ tsp.

The method of preparation

  1. Rinse the cherries in cool water, dry them slightly on a sieve and sort them out. Pits are removed from selected berries. To extract the juice, use a manual or electric juicer. In extreme cases, a metal sieve will do.

  2. Next, measure the required amount of juice. Pour it into a pan with a thick bottom. Put the container on fire and heat it.

  3. Pour sugar into the hot liquid. Cooking continues until the syrup thickens. It should become viscous.

  4. If the berries were passed through a sieve, then the mass will need to be filtered several times. To do this, leave the finished syrup on the table for several hours. The remaining pulp will precipitate during this time. Pour the top transparent syrup, being careful not to stir, into another bowl, heat it and let it stand again. This procedure is repeated several times. Three to four approaches are enough.

  5. The final step is to add citric acid to the mass. In this case, it is a preservative and flavor enhancer.

  2. The cake with drupes is further used for culinary purposes, for example, for making jelly and compotes.

  3. Mix the juice with sugar. While the crystals are dissolving, prepare a decoction of the leaves. To do this, dip the cherry leaves in water and boil for 7 minutes.

  4. When the broth is ready, the leaves are removed and the liquid is mixed with cherry juice.

  5. Boil the mass at the minimum power of the burner for half an hour. During this time, the syrup thickens and is then bottled.
