New World Champagne: history, overview of taste and types

The date of foundation of the House of Champagne wines "Novy Svet" is considered to be 1878, when Prince Lev Golitsyn acquired the estate Novy Svet and decided to start a new, promising business here - the production of champagne.

The history of the drink

Golitsyn's goal was to produce an exquisite drink that was as good as the best French examples.

In the New World, the prince created a nursery and a collection of vines, which included more than 600 varieties. After many years of painstaking work, Golitsyn came to a conclusion that is still relevant today: "Grapes and wine are a product of the area".

He selected the best grape varieties that became the basis for local champagne wines: a group of Pinot, Chardonnay, Aligote, and Riesling Rhine. They are still used by Crimean winemakers to produce sparkling wines.

In parallel with the search for the right grape varieties, work was underway to build a system of tunnels for aging champagne. Most of them were dug in the monolithic rock of Koba Kaya.

Several tunnels are located below sea level, which makes it possible to maintain the temperature from 8 to 12 degrees all year round, which is necessary for aging champagne. The cellars have been preserved in excellent condition and most of them are still used by the New World Champagne House today.
