Moonshine from honey: 2 recipes at home

Surely each of us has a lot of old honey in the kitchen. It's a pity to throw it away, but you don't want to use it for cooking or medicinal purposes either.
There are no hopeless situations. We recommend that you make homemade honey moonshine. Just don't confuse it with mead. These are two completely different drinks that differ in production technology, strength and taste.
Any honey is suitable for honey brew: linden, flower, buckwheat, etc. д. The quality does not matter much either. You can even use slightly spoiled, fermented honey. The taste of the finished product will not be affected.
The result is a good moonshine with a light honey flavor.
Classic honey brew
Ingredients
Honey - 3 liters
Water - 10 liters
Baker's pressed yeast - 200 g
The method of preparation
Mix honey with water in a saucepan of appropriate volume.
Then bring the mixture to a boil and boil over low heat for about 10 minutes. Be sure to remove the resulting foam.
Turn off the burner and cool the wort to 27-30 degrees.
Dissolve the yeast in a small amount of warm water and add it to the honey syrup.
Pour the brew into a fermentation container and install a water seal. Leave in a dark room at a temperature of 18-28 degrees for 10-12 days.
After the fermentation is complete, drain the honey brew from the sediment and then distill it (the distillation technology is described at the end of the article)
Honey brew with sugar
In this recipe, sugar more than doubles the yield of the finished product. This does not affect the aroma and taste.
Ingredients
Honey - 3 kg
Water - 25 liters
Granulated sugar - 3 kg
Pressed baker's yeast - 300 g
The method of preparation
Heat the water to a temperature of 27-30 degrees.
Dissolve honey, sugar, and separately diluted yeast in the prepared water and mix everything well until smooth.
Pour the wort into the fermentation tank and install a water seal.
Transfer the brew to a warm place for 7-12 days.
As soon as fermentation stops, the brew will brighten and sediment will fall out at the bottom. Before distillation, it must be drained into a clean container.
Technology of distillation into moonshine for 2 recipes
We distill the prepared brew according to one of the above recipes in a cube and collect the product until the strength in the stream drops below 30 degrees.
Now we need to determine the amount of pure alcohol in the collected product.
At this stage, dilute the distillate with water to 20 degrees. You can also purify the moonshine with charcoal, but this is not necessary.
During the second distillation, the first 8-12% of alcohol ("head") is collected in a separate container. Because due to the content of a high concentration of harmful substances, health problems can occur.
Collect honey moonshine until the strength in the stream drops below 40 degrees.
Before tasting, dilute the finished product with water to the desired strength and keep it for several days in a cool place (cellar or refrigerator).
