Ingredients

  1. Lychee liqueur - 5 ml

  2. Golden rum - 25 ml

  3. Limoncello - 15 ml

  4. Lime juice - 15 ml

  5. Sugar syrup - 15 ml

  6. Quail egg white - 25 ml

  7. Cranberries - 20 g

  8. Vanilla sugar - 6 g

  9. Ice lumps - 200 g

Method of preparation

  1. Put ice in a shaker, add lime juice, sugar syrup, lychee liqueur, limoncello and rum.

  2. Shake everything thoroughly and strain the contents of the shaker into a pre-chilled champagne saucer through a strainer.

  3. Mash the cranberries with a blender and transfer to a saucer.

  4. Add quail egg white, vanilla sugar and whisk until thick foam.
