Date liqueur: 2 recipes at home

Date liqueur is very popular in Tunisia. This overseas drink is quite easy to prepare at home, and you don't have to go to Tunisia to get it.
Tips before you start
The color of the dates should be dark brown and have a matte texture.
Dates should not stick to hands, have cracks and be of medium softness.
The smell should not contain moldy and sour "notes".
When choosing herbs and spices for liquor, you need to pay attention to the rich aroma. To do this, rub a little spice between your fingers and if the aroma has the characteristic smell of a particular plant, then you are on the right track to the perfect date liqueur.
Important! Be sure to remove the pit from the dates, it can not only spoil the taste of the liqueur, but also provoke poisoning.
Classic date liqueur recipe
Ingredients
Dates (pitted) - 500 g
Alcohol (70%) - 1 liter
Honey - 400 g
Water - 1 liter
Tarragon - 1/2 tsp.
Cumin - 1 tsp.
Cardamom - 1 hour.л.
Cloves - 2 pcs.
Nutmeg - 1 g
Oak bark - 1 g
The method of preparation
Pour all the spices and herbs into a glass container, pour alcohol and let it stand in a dark place for 5 days. Do not forget to shake daily.
After 5 days, filter the alcohol tincture through a purchased or homemade filter. Pour into a clean glass container and set aside.
Sort the dates, remove the pit and rinse thoroughly under running water.
Put the prepared dates into a saucepan and pour water (2 cm above the dates, if the specified water is not enough, you can add), bring to a boil and cook for 5 minutes over low heat.
Cool the date broth to 60 degrees and add honey, stir until it is completely dissolved.
Pour the alcohol infusion, the contents of the pan into a glass container and add oak bark, then mix thoroughly.
Let it stand for 10 days in a cool, dark place.
After this time, the liquor must be filtered and poured into glass bottles.
Before tasting the drink, let it brew for 2 months.
Store the finished date liqueur in a cool, dark place.
Date liqueur Tunisia
Ingredients
Dates - 200 g
Cognac - 500 ml
String vanilla - half
Cloves - 2 pcs.
Water - 100 g
Sugar - 100 g
The method of preparation
Sort out the dates, remove the pit, rinse them thoroughly under running water and cut them into small pieces.
Cut the vanilla pod, remove the seeds and cut the half into small pieces.
Put the prepared dates, chopped vanilla bean and its seeds in a glass container. Then add cognac and let it brew for 1 month.
After 30 days, you need to filter the liquor several times through a purchased or homemade filter.
We cook a simple sugar syrup.
After cooling, mix with tincture of cognac, mix thoroughly and let it brew for 2 weeks in a cool dark place.
After 14 days, filter again and pour into glass bottles.
It is advisable to insist another 10-14 days before tasting.
