Old Kakheti cognac: features, types, how to distinguish a fake, how and what to drink

The Kakheti Traditional Winemaking Company is associated with the famous winemaker Antimoz Chkhaidze. In the distant 80s, the winemaker created a wine cellar that was unrivaled in those days.

Antimoz devoted most of his life to the study of different grape varieties. For many years he developed the technology for wine production. In the ancient Gurian village of Askana, Antimoz created an unsurpassed wine variety - "Chhaveri".

Thanks to this drink, he became known in all European countries. Using the old family customs, Chkhaidze's great-grandchildren created the Kakheti Traditional Winemaking Company.

Features of cognac production

The Kakheti method is based on preserving wine and machara (young wine in which the fermentation process has barely completed). Only special earthenware called kevri is used for this purpose. It is made only from fired clay using a special technology.

The finished wine is poured directly into the pre-treated kevri, after which it is buried in the ground. Thanks to this, the vessel maintains the optimal temperature of the finished drink. The main component of winemaking in Georgia is kvevri. Dishes that give the wine a special flavor, saturate it with useful properties.

Old Kakheti vineyards
